    It's a very interesting bbq! I'd probably turn the heat down though and get some more even colour on the meat. The score lines on your meat are basically charcoal and between them there's almost no colour and colour on steak is flavour which is why chefs often cook steak on flat steel pans to get a nice crust. Was this cooked on high heat?

    All you have done is put char grill marks due to excessive heat. That steak after 7 minutes would be 'blue' as in Rare almost steak Tatare.
