    I’m still giggling here thinking back to your earlier worry & concern of not ending up with a good cucumber crop/harvest this year due to a rocky start🤭. It seems the Cucumber Gods do have a sense of humor 😅🥒. What a pickle to be in….😂

    One of my favorite ways to use up big slicers is to peel them , and slice , green peppers , tomatoes and some onion , diced . Add a few heaping spoons of mayo , some cream and SEASONING SALT to your taste !! Outstanding summer salad ..

    If'you like you can cut your cucumbers in half, take out the seeds and then you mix tuna with cream cheese and chopped shallots and you stuff your cucumbers for lunch ! Yummy

    Well you've had a busy afternoon see your thin little dill pickles that's what I would call gherkins which I love. Were do you find the time to write cook books you must have some energy. I really hope you get your weekend off you really deserve it because next week back to work as I've said before the Joy's of being self employed. So I've crossed my fingers and touched wood that you get your weekend off and Dan and you get some time to relax. Take care all of you. Jean Scotland. Ps do you have pickled red cabbage that's delicious you know since watching earlier on I've raided the pickles im paying for it now but i did enjoy them. Ps had a good look at dill pickles that they sell in our shops and i think their the same as gurkens. Glad i figured that one out.

    I’m in central Alberta. My 17 squash plants are so far behind, both in height and flowering… there just is no way that the few flowers that are blooming will produce any squash before the cold weather arrives. So, I’ll look to farmers markets…

    When you pack cucumber into jars to pickle it is easier to pack if you hold the jar at a 45 degree angle. They tend to stay upright instead of falling down

    If you still need fun stuff to do with cucumbers, I saw an amazing-looking recipe the other day for Bloody Mary pickles-and I know your celery is popping as well! Don’t know if that’s to your family’s taste but sharing in case it sounds delicious ❤

    Awww I feel so bad you did the reintro for us as I know so much hard work goes into the filming. But you caught us up perfect. xo I was so happy to see how your beans looked pre canning as I get so mad when mine won't stay down and worry but they still turn out fine. So now I will not get so crazy about it. I am also excited about the second version to the cookbook. I do hope that you keep the larger print it is so wonderful. It really is wonderful the bumper crop of pickling cukes second planting you are getting. I also think packing pickles is the worst haaaaa. You have me craving borsht again.....the weather is calling it on. hugs

    When I had too large Cucumbers I would process them in rings and put up what we called Christmas Pickles. They were a spiced pickle and really crisp. I put in a few drops of red or green food coloring in jar thus the name. I loved these almost more than my bread and butter pickles. I really enjoy ur videos.

    I use my large squash as zucchini Parmesan, instead of eggplant. or scrape out the seeds and make them into baked boats with hamburger and tomatoes, cheese, egg. onion powder, garlic powder, salt and pepper.

    I love dilly beans (altho not with the pepper flakes). Did you know you can do the same thing with carrots? When I was canning my children just loved them! You are such a busy lady!

    I love love love pickled beets. We have them for every holiday and I make them diced for salads! Home canned taste so much better than store bought!

    I can't remember if I've seen you make and can, deconstructed stuffed cabbage? I just saw a Ball or Kerr canning book from 1982 Where they show how to can rice! You have to rinse in 5 times, to make sure all the starch is out. The video I watched, she made Spanish rice, and some white rice. I would think then, it would be fine to even put well rinsed rice in the deconstructed stuffed cabbage with hamburger, rice, tomato juice, and cabbage. That would be so nice to just pull off the shelf, for a quick lunch or dinner, during winter! Can you research that?

    Too many Cucumbers? Toss cucumber slices with half vinegar and half olive oil, arrange on dehydrator trays, and sprinkle with very tiny bit of salt. Dehydrate overnight. Yum!

    Love watching your videos I have grown my own vegetables on my back deck since I do not have a yard and it was fun I had tomatoes galore I had quite a few cucumbers peppers carrots and potatoes and I gave a lot of the vegetables to family members of mine It was so much fun to see the vegetables grow

    You can also cut up the cucumbers and sprinkle salt on them. They're delicious. Makes a great snack if you like cucumbers!!! I know my folks love them like that. !! Great video. I always learn a lot from you

    Watching you jar up the pickles reminded me of when my mom would can dill pickles she would sometimes cut them or quarter then lengthwise so that she could fit more into the jars.

    A few years ago I saw a video when you have pickles coming out of your ears is to juice them and put them in your water. Freeze the juice and put in ice trays and then frozen put in a baggie in the freezer. Later just throw a couple in your water cup.

    Have you ever considered sous vide for your dills? I’ve not tried dills, though I will next week, but last year I did pickled jalapeños and they were so crisp and delicious.

    Hi there just watched a video of someone that sliced the zucchinis and crumbed them, flash freezed on a cookie sheet Then added some of the flour savoury crumb mixture in a ziploc and added the portions needed of frozen rounds into that ziploc bag. I am going to try that. They deepfryed the zuchini. My mom used to do the same with eggplant, and I loved it.

    I find I mostly use the vegetable Better Than Bouillon. I have the beef, ham & chicken also, but I buy the vegetable most often. Do you like fermented pickles?

    My friend my mom used to make sliced carrots. Cauliflower peppers, brocoli, and canned it sweet or dill.I could eat a jar of it myself

    I add Serrano peppers in my dill pickles and they have a great flavor. The get hotter the longer you wait to eat them.

    Have you ever made Lime pickles? You will need pickling lime. The recipe is on the package usually and makes a sweet pickle. So good. With the larger cucumbers have you considered making dill spears?

    Hi Chelsea, I live in Kentucky and I have grown some beautiful watermelons and there are about twenty or so on the vines… and then the leaves started dying back and the melons started rotting. And that’s when I discovered a massive amount of stink bugs and I am devastated! I’ve researched how to kill them and I can’t find anything useful, other than you have to smoosh them…, there’s just too many. Do you have any ideas at all to save them?

    Please, please considering juicing those cucumbers. It is absolutely delicious, uses lots of cucumbers, and you can freeze it for all kinds of uses.

    A couple of questions! Do you have a borsht recipe in one of your cook books? If you don't want to answer this question, I understand. I know you said a while back that you and Dan have chosen not to have your children in your videos - I think it's a wise move. However, you work so hard in the garden and in your kitchen preserving your harvest. Do your children help with the process off camera. (I've wondered this for some time because you work so hard).

      Yes, my family helps off-camera. I try to mention it when they do. They help a lot with chopping and hauling vig up from the garden fro me.

    With ur zucchini make ciom Botta u fry zucchini, yellow squash, onion add tomatoes , potatoes u can put sauce or as many tomatoes as you want add garlic when frying up everything else I boil fresh green beans in a separate pot when there tender add them season with whatever you like I use onion,garlic powder oregano fresh basil this I'm hoping will be a favorite of urs all my kids go crazy when I make it even my x husband lol
