Ingredients:
- ¾ kl Menudo Cut
- ¼ kl Pork Liver
Season w/ Salt & Pepper
- 1 pc Carrot diced
- 2 pcs Potato diced
- 1 can Vienna Sausage
Season w/ Salt
- 1 pc Onion minced
- 5 cloves Garlic minced
- 1 tbsp Vinegar
- 4 pcs Laurel Leaves
- 230 g. can Liver Spread
- 1 pc Maggi Chicken Cubes
- 2 pc Red Bell Pepper
- ⅓ cup Raisins
Season w/ freshly cracked Black Pepper

My favorite menudo recipe is from my tita. Smaller slices yung meat and veggies, may raisins and/or pineapple tidbits. Mejo reduced ang sauce to the point na naghihiwalay na yung mantika from the rendered oil from pork fat at liver spread mixture. Tapos mas lalo pa siyang sumasarap pag iniinit as leftover kasi yung pagiging mushy ng carrots at potatoes adds another level of tickness sa sauce. Yun na ang naging go-to recipe ko whenever I crave for menudo.
hir in bulacan instead of suka ,calamnsi ang gamit no tomato sauce but anato to add color ,menudong tagalog as we called it

That’s how my late Mom cooks menudo. In Cavite, that’s how they do it. I grew up with this kind of menudo cooking. And it’s how i cook it now.

Yung Lola ko po ganito din mag menudo kasi nangangasim siya sa tomato sauce hindi ko alam bakit. Pero nilalagyan niya calamansi para di daw po mapanis agad 😂 Pero so far masarap naman lasang menudo padin. 😅

This is the reason why "menudo" is my favorite among the confusing dishes (caldereta, menudo, afritada, mechado) hahaha
Menudo in Spanish means "small" or "minute". "A menudo" means "usually". So, it's the most inclusive one kasi kung di pumasok sa iba, edi sa "usually" ka hehehehe

That's original menudo no tomato sauce and soy sauce we use kalamansi or vinegar is good thank you chef tatung your the best kahit walang Vienna sausage basta Kay stay and bell pepper to complete and carrots potato are so good the original menudo
