In these video tutorials, I normally use Bakels Premixes to save on time.
(Bakels is a bakery grade cake premix. Another great one is Allied Mills)

I use these butter based cakes above because they are sturdy under fondant and stable at room temperature, as are the muds.

WHITE CHOCOLATE GANACHE RECIPE:
250 grams white compound chocolate
85 grams heavy cream
Melt these two together in a microwave at 20 second bursts, stirring in between bursts until completely melted
Thank you guys for tuning in! The diamond mica powder that I used is called "Diamond" and made by Creative Cake Decorating Australia.
You should be able to find superfine holographic edible mica powders at your local cake decorating shop. I bought this container from
a cake decorating expo mid last year, but Cake Deco in Melbourne stock it as well. This method can be used with gold mica powder as well, or pretty much any luster dust. Definitely experiment and let me know how it worked out for you :)

Rosie's Dessert Spot hahaha it seems you got me wrong!!! It was actually a name for the cake!!! The cake was absolutely stunning and it had all the elements any wedding dress would have.... the perfect color, the glitter, and the flowers!!!!

Every time I have done a ganache drip, I've had minor problems. It either sets up too quickly leaving unsightly lumps (which I re-melt with a small torch) or it separates as I am putting it onto the cake. What do you suggest I can do better with the ganache to prevent these problems? You are the drip queen! You make such lovely drip cakes.
Hi lovely! The separating ganache problem used to happen to me when I over-mixed the ganache or stirred too vigorously. Good call on the small blow torch by the way, that's a really great tip! I am wondering what your ratio is for choc and cream? For the white choc drip I add 1/3 of the weight in cream. I also added white white icing colour to the ganache, which makes it white and also thickens it up every so slightly.

I’m having a hard time finding “food safe” floral wire like the one you used. Wilton makes one but it’s wrapped in paper and people say the paper falls off. Please let me know where you bought yours. Thank you! I am a new subscriber and I love your channel!

Hi Rosie! Your cakes are gorgeous! I was just wondering, would the recipe you've given here for your white chcolate ganche dry out enough in order to paint the drips with gold luster dust and lemon extract? Thank you!
HI Laura, thank you for your lovely comment! :) Yes it does. It still remains a tad soft, but after it sits in the fridge for about 2 hours it does harden up enough to paint. If you prefer super hard drips to paint, I would recommend using white chocolate mixed with vegetable oil. This also works a charm and is easier to paint over.

Hi Nora, thank you for the lovely comment! I added it in the description just this morning, sorry about that! It's all up there now :) But basically with white choc ganache, you just add one third of the weight in cream. i.e, 300 grams white chocolate to 100 grams of heavy cream xx

Question: can a cake with a softer crumb be used for tiering if dowels are used? Or does the cake have to be firm? I prefer soft, moist cakes. I know the firm cakes aren't necessarily dry, but the softer crumb is my preference.
Firm cakes like mud or butter based cakes would be best :) sponge cakes are very delicate and cake move around, sink and misshape easily, especially when under weight / pressure.

Where do you get the food safe wire? Is floral wire from cake shops ok to pierce into the cake or does it need to specifically mention food safe?
