12 whole cloves
3 cinnamon sticks about 4” long
2 2/3 c. Liquid honey
Add 2 lemon slices and 1 cinnamon stick to hot jar. Ladle hot honey into hot 8oz. jelly jars leaving 1/4” headspace. Remove air bubbles. Wipe jar rim. Center lid and apply band to fingertip tight.

yum yum
Omg I just ordered everything I need to make this for the holiday gifts. Love making your yummy stuff.
Thank you, I'm going to make this for my tea lovers!
👍🏽
One of my personal goals for 2023 was to learn to can. I just did my first batch of spiced honey!!! No cracked jars and hearing the jars ping was music to my ears!!!Successful first canning! Yay!!!
Congratulations 🎈🎉
@@carol-thriftychichousewife6231 Thank you!!!
Love your holiday videos! Thanks for putting these out daily!!! Such a treat. 🥞🍯🥧 wanted you to know that you’re appreciated. 🧡🧡🧡
THANK YOU! You so just made my day. I appreciate you all so very much 💕💕
I can’t wait to make this! I love all of your canning recipes! Thanks!
All of it looks great, and yes, I can almost smell the aromas! As a kid, my Mom made our cough syrup for winter that was kept in the refrigerator in a BIG jar. But I Know she mixed that Whiskey with it!!!
Adding this to my list! Love your videos.
I am definitely saving this video! Thank you so much! Your videos are awesome!
Great idea!
Would make a very nice gift to go along with some tea.
My thoughts exactly 😉💕
I’m going to make this for Christmas! Thank you for sharing
I think I am gonna make this today
Clove is also a digestive aid. It also has antioxidants. 😀
This is definitely a simple recipe. Could be a fun project to do with my boys over the holiday break. TFS
Nice one! Adding this to my holiday gift giving roster!
Fantastic!!! I love this. I can smell it and haven't even made it yet!!!🙂
Oh I love this ❤️❤️❤️
Going to try this, thank you
🌹 Great video!
You need to do a daytrip and deliver some of this goodness .. great recipe Carol.
Yes, you definitely need this 😘. We’re on our way to Kent to pick our baby girl or I’d be there
Aww! I know you'd deliver if you could. Enjoy the drive! Enjoy your family time. ❤️
Great idea Carol. I'm going to give this a try soon but, since I have the small mouth jelly jars, I think I'll cut the lemons in wedges and just stand them up in the jars.
Great idea😊
Hi Carol, once open where do we store? Thank you.
Refrigerator is best
Oh my gosh made this today so easy and yummy. We decided to leave one out to start using immediately does the leftovers need to be refrigerated? Thanks for the recipe!
Yes, please refrigerate after opening 😊
Good morning, I really enjoy your channel, I would love to see a video on canning for begginer if possible. Thanks so much and happy holidays.

Quick ?... once opened, will the lemons 🍋 mold on the counter already opened??
Once opened it should be stored in the fridge 😊
@@carol-thriftychichousewife6231 Thanks, good to know!
Thanks for all your great recipes I have really enjoyed trying new things and up in my canning game based on your recipes one quick question after you boil the honey mixture can you add alcohol to it like a peach brandy or something
Thank you and yes! Add alcohol at the end 😊
Not able to find the exact jars on Amazon. Is there another source for your jars?
Right now they are in short supply everywhere so just buy what’s available in your area 😊
Can you leave the cinnamon and cloves out? At least the cloves? I would like to sell this at my farmers market for use with tea , both hot and iced, and the cloves will def be too strong for that. Or should I use the recipe for honey oranges and sun the oranges with lemons??🧐🤨
You can leave the spices out but they are delicious.
@@carol-thriftychichousewife6231 just double checking; I want to do just honey lemons and just honey oranges for use in teas. The oranges are safe to boil 2 minutes like the lemons right? I put more lemon slices jn mine and left out the cinnamon stick and cloves since they can be strong flavors. These oranges won’t be for eating, just for use in tea
Can we add Ginger to this also
Yes as long as it’s powdered ginger as it has not been tested for safety using fresh
Made this honey. Delicious! Have you canned a hot chili pepper type honey?
No I haven’t
Can you do a cold infusion to keep all the benefits of honey?
Yes, just add all ingredients to a jar and store in the fridge 😊
another video that is related to this is making VEGAN HONEY -
i seen them take pear juice and sugar and make a heavy syrup and i did it and it was great!
i didnt can it ,i just made enough for myself ,because my family is allergic to every fruit god created -
PLUS ,if you save the peels from your fruit and dry them -they make great simmering pots for your crock pot.
just put the peels in the pot add water -put the heat on low and your going to have a beautiful smell through out your home.
Very good video, although heating honey to high temperature kills all the enzimes that organic raw honey has.
I make a hot honey with cayenne pepper, ginger, and garlic that is fantastic for a sore throat (or as a glaze for chicken or veg). I wonder if it could be canned in the same way as this?
Yes, dried herbs are safe to add but I wouldn’t use fresh ginger or fresh garlic as it can throw off the pH. 😊
I know this a random question but I was just wondering if you’re still using your curology products? I never saw another update after the first and was curious if you’re still using it! That I you in advance 🥰
You’re so beautiful!!
Hi! Yes, I still use curology. I know I need to do an update but I can’t seem to get out of my canning kitchen 😁. I use just the custom cream. I’m not using their other products. If you’d like to know what else I use I’m happy to share. Just let me know 😉. And thank you for the sweet compliment and for supporting my channel 💕
There wouldn’t be a problem with cutting the lemon slices in half before I put them in the jars, would there? I only have the regular 8 oz jelly jars which are narrower.
No, not at all 😊
I Carol, love this idea! Is the problem canning this recipe in the 4oz jars?
Not at all just process for the same time 😊
@@carol-thriftychichousewife6231 Thank you! Also, if you ever do your own cook book I would be the first to buy it ❤️
@@Tripple3Hestead I’m working on one 😊
Another good recipe for gifting. Could I put this in 4 oz jars with one lemon slice and half a cinnamon stick? I would process them fot the same time as the 8 oz jars (15 minutes since I live at an altitude of just over 1000 feet. Thanks, Carol.
Yes, absolutely 💕
I am also a big tea drinker and use honey. My favorite is Hot Cinnamon Spice! It has cinnamon, clove with a little orange. Can I substitute the lemon for orange slices?
Yes
I've always heard boiling honey ruined the medicinal goodness? But it sounds lovely for a hot cup of tea.
Excessive heat for a prolonged time is the problem as I understand it. This recipe is heated for a very short period of time.
@@carol-thriftychichousewife6231 Good to know!
Once honey is heated over 95 degrees it is no longer “raw” and looses its “medicinal” benefits. This is however a great soothing cough suppressant and of course is delicious for culinary use. I think I will be making some for my mother and I to enjoy with our tea.
If I canned this in 4 oz jars instead of 8 oz jars, do you think it would be better to cut the lemon slices in half (semi circles that have the same thickness as original slices) or just make the slices twice as thin and have them still be full circles? I personally think the full circles would be prettier in the jar, but I wasn’t sure if that would make them too thin to hold up to the canning process.
Not sure on that one as I’ve only used 8oz jars. Either should be fine I would think
Hello! I made this but I left out the cloves because no one in my family likes the flavor of clove. I had just a tiny amount leftover to taste, I tastes just like Halls honey lemon cough drops to me. I had planned on using it as a cough suppressant so I can't say I am disappointed but I guess thought I would taste honey more than the lemon.
I just wonder if I had used the cloves if it would have changed the taste from ""Hall lemon and honey" cough drops to something less medicinal.
The cloves definitely add to the flavor but it also depends on the honey you use. I used raw unfiltered wildflower honey which has a very strong honey flavor so I didn’t taste much lemon. Also the taste will meld over time
@@carol-thriftychichousewife6231 I use local honey from my friends hives so I am not really sure what type I would call it. But I think it would make sense about how strong the honey is would make a difference. My honey was on the milder side. I didn't think about that! Thanks for your reply!
Do you think you could substitute oranges for the lemons?
Yes, but hold on bc I’m planning a video involving honey and oranges 🍊😁
@@carol-thriftychichousewife6231 WHOOOO HOOOO!!!!!❤️❤️❤️❤️
Hey Carol, when you open this is it safe to leave out or does it need to go in the fridge?
Nevermine i see you have already answered that question lol
Would this have to be refrigerated after opening?
Yes 😊
@@carol-thriftychichousewife6231 thanks Carol!
Someone said "Gift Baskets"? - LOL Wish I could post a picture response here, but fortunately we belong to Carol's Canning Facebook group - well, until we're banned. LOL Nice Presentation Carol
Thank you! And I’ll never ban you. You two are just great! 😊
Yikes! Canning honey destroys the nutrients. Mix honey with ground cinnamon and ground cloves if you want it flavored. Someone that needs it for a cough or sore throat probably should also have the nutritional benefits.
Technically, if you use it in a hot drink it’s the same issue. Everyone can decide for themselves. 😊
