Canning Spiced Honey ~ Infused Honey For Tea ~ Natural Cough Syrup ~ Christmas Gifting

  • Add this to your holiday canning list. Sweeten hot tea, drizzle over cake, oatmeal, or yogurt. Also makes a great natural cough suppressant. Makes a wonderful homemade Christmas gift as well.
    1 lemon sliced in 6 slices
    12 whole cloves
    3 cinnamon sticks about 4” long
    2 2/3 c. Liquid honey
    Add 2 lemon slices and 1 cinnamon stick to hot jar. Ladle hot honey into hot 8oz. jelly jars leaving 1/4” headspace. Remove air bubbles. Wipe jar rim. Center lid and apply band to fingertip tight.
    Process for 10 minutes in boiling water or steam canner, adjusting for altitude as follows:
    1,001-3,000 ft ~ increase processing time by 5 minutes
    3,001-6,000 ft ~ increase processing time by 10 minutes
    6,001-8,000 ft ~ increase processing time by 15 minutes
    8,001-10,000 ft ~ increase processing time by 20 minutes
    Allow jars to rest undisturbed for 12-24 hours. Remove bands, check seals, wash and label jars. Store in a cool dark dry place.

    One of my personal goals for 2023 was to learn to can. I just did my first batch of spiced honey!!! No cracked jars and hearing the jars ping was music to my ears!!!Successful first canning! Yay!!!

    All of it looks great, and yes, I can almost smell the aromas! As a kid, my Mom made our cough syrup for winter that was kept in the refrigerator in a BIG jar. But I Know she mixed that Whiskey with it!!!

    Great idea Carol. I'm going to give this a try soon but, since I have the small mouth jelly jars, I think I'll cut the lemons in wedges and just stand them up in the jars.

    Can you leave the cinnamon and cloves out? At least the cloves? I would like to sell this at my farmers market for use with tea , both hot and iced, and the cloves will def be too strong for that. Or should I use the recipe for honey oranges and sun the oranges with lemons??🧐🤨

      @@carol-thriftychichousewife6231 just double checking; I want to do just honey lemons and just honey oranges for use in teas. The oranges are safe to boil 2 minutes like the lemons right? I put more lemon slices jn mine and left out the cinnamon stick and cloves since they can be strong flavors. These oranges won’t be for eating, just for use in tea

    another video that is related to this is making VEGAN HONEY -
    i seen them take pear juice and sugar and make a heavy syrup and i did it and it was great!
    i didnt can it ,i just made enough for myself ,because my family is allergic to every fruit god created -
    PLUS ,if you save the peels from your fruit and dry them -they make great simmering pots for your crock pot.
    just put the peels in the pot add water -put the heat on low and your going to have a beautiful smell through out your home.

    Very good video, although heating honey to high temperature kills all the enzimes that organic raw honey has.

    I make a hot honey with cayenne pepper, ginger, and garlic that is fantastic for a sore throat (or as a glaze for chicken or veg). I wonder if it could be canned in the same way as this?

      Yes, dried herbs are safe to add but I wouldn’t use fresh ginger or fresh garlic as it can throw off the pH. 😊

      Hi! Yes, I still use curology. I know I need to do an update but I can’t seem to get out of my canning kitchen 😁. I use just the custom cream. I’m not using their other products.     There wouldn’t be a problem with cutting the lemon slices in half before I put them in the jars, would there? I only have the regular 8 oz jelly jars which are narrower.

    Another good recipe for gifting. Could I put this in 4 oz jars with one lemon slice and half a cinnamon stick? I would process them fot the same time as the 8 oz jars (15 minutes since I live at an altitude of just over 1000 feet. Thanks, Carol.

    I am also a big tea drinker and use honey. My favorite is Hot Cinnamon Spice! It has cinnamon, clove with a little orange. Can I substitute the lemon for orange slices?

    I've always heard boiling honey ruined the medicinal goodness? But it sounds lovely for a hot cup of tea.

      Excessive heat for a prolonged time is the problem as I understand it. This recipe is heated for a very short period of time.

      Once honey is heated over 95 degrees it is no longer “raw” and looses its “medicinal” benefits. This is however a great soothing cough suppressant and of course is delicious for culinary use. I think I will be making some for my mother and I to enjoy with our tea.

    If I canned this in 4 oz jars instead of 8 oz jars, do you think it would be better to cut the lemon slices in half (semi circles that have the same thickness as original slices) or just make the slices twice as thin and have them still be full circles? I personally think the full circles would be prettier in the jar, but I wasn’t sure if that would make them too thin to hold up to the canning process.

    Hello! I made this but I left out the cloves because no one in my family likes the flavor of clove. I had just a tiny amount leftover to taste, I tastes just like Halls honey lemon cough drops to me. I had planned on using it as a cough suppressant so I can't say I am disappointed but I guess thought I would taste honey more than the lemon.
    I just wonder if I had used the cloves if it would have changed the taste from ""Hall lemon and honey" cough drops to something less medicinal.

      The cloves definitely add to the flavor but it also depends on the honey you use. I used raw unfiltered wildflower honey which has a very strong honey flavor so I didn’t taste much lemon. Also the taste will meld over time

But I think it would make sense about how strong the honey is would make a difference. My honey was on the milder side. I didn't think about that! Thanks for your reply!

    Yikes! Canning honey destroys the nutrients. Mix honey with ground cinnamon and ground cloves if you want it flavored. Someone that needs it for a cough or sore throat probably should also have the nutritional benefits.
