    Makes 24 completed sandwich cookies

    INGREDIENTS
    3 Egg Whites
    ¼ cup white sugar (50 g)
    2 cups confectioners sugar (200 g)
    1 cup almond flour (120 g) (SEE NOTE BELOW)
    pinch of salt
    ¼ tsp cream of tartar (2 ml) * You can omit if needed, just may take a bit longer to reach stiff peaks but the recipe will still work)

    RASPBERRY BUTTER CREAM
    1/4 cup salted butter (60g)
    3/4 cup powdered sugar (75 g)
    1 cup (150 g) fresh raspberries, worked through a sieve to extract 3 tbsp of juice
    METHOD:
    Preheat oven to 300F degrees
    Beat egg whites until foamy, then add salt, cream of tartar and white sugar for 8-10 mins. TIP: #1 eggwhites should be room temp. To create room temp eggs, submerge in warm water for 5 mins.
    Whip until they form a peak that stands upright. Think Seattle Space needle.
    Then add the food coloring. TIP#2 Color does fade as it cooks, so do a shade or two darker than you want them to be.
    TIP#3 Sift almond flour, and powdered sugar. What remains will be the larger lumps of almond pieces. Just discard those, or use them to snack on :) You want a really fine powder mixture to create a smooth and pretty on top to your cookie.
    Fold flour/sugar mixture into the egg white mixture. TIP#4 This is where all your hard work can really go wrong. Under mix and your macaroons will be lumpy and cracked when the bake with no feet, over mix and your macaroons will be flat and won't have feet, the mark of a well-made macaron. In my experience 65-75 turns of your spatula when folding is about the right amount of time. But again, it can be tricky, depends on how strong you are, Ha! So it can take a few tries to get it right. But when you do, the trumpets will blare and you will feel SO accomplished!
    Transfer batter to a pastry bag.
    Pipe out 1 inch rounds on a baking sheet lined with parchment paper.
    TIP#5: tap the pan hard at least 2-3 times to release the air bubbles. This will prevent the tops of your macaroons from cracking.
    TIP#6 Let them sit out for 20-30 mins, or up to an hour if you want. This will allow them time to dry out a bit before hitting the hot oven. They should be "tacky" to the touch, but not stick to your fingertips. This is another important step to assuring your macarons develop feet! When they dry out they can't spread out in the oven, and are forced to rise up. That's what creates the feet!
    Bake for 20 mins. DO NOT UNDER BAKE, even if they look done! Otherwise they will stick to your tray.
    Meanwhile mix the buttercream. Whip butter with an electric mixer until pale and fluffy. Slowly add sugar. Then place sieve on top of a bowl the same size. Work raspberries through the sieve with a spatula, pushing them through, mashing them around until you extract their juice. You want 3 tablespoons of juice.
    Add juice to buttercream, and whip until combined. Transfer to a pastry bag, fitted with a small tip (about ¼ " in diameter)
    Reverse cookie shells on their backs, and pipe a small mound of filling on one of them. Top with the other shell et Voila!
    If not eating right away, keep refrigerated.

      I cooked mine for twenty minutes but they were really brown around the edges and more crunchy. The second time i cut the cooking time a few minutes they were just starting to brown but the texture was much better.

      It says to preheat your oven ... how long shud you pre heat -before outing tray in timing for 20 mins as that affects overall cooking and 20 mins can b too much and they burn - happened to me. Therefore really like to know the pre heat time ? Thanks

      Tell me what wen't wrong. I have succed with another recepe. My guess is that you added the sugar to fast so that the meringue never got to stiff peaks or that your dry ingredients weren't fine enough. A tip is to pulls them in a food processor or blender.

    So I've been attempting to make macrons 4 four times. Your recipe was the 4th time and I'm SO GLAD YOU SHARED, because I almost cried tears when I pulled them out and they were perfect.       i did all your steps it was amazing i have made more than 30 pieces of macaroons but the problem was they are too much thin
      the lava was too much rolling on the butter paper should i use a silicon template with round circle in it i wish i can send you some picture to show you how it was after baking it

      No macaron recipe is truly foolproof, there are too many variables where things can go wrong. You probably need to try different recipe ratios, make sure your meringue is the right consistency before mixing with your almond mix, check your macaronage technique (the folding part), then check your oven. All four of those can be just a little off and your macarons will fail, ask me how I know! I highly recommend reading and trying this recipe: notsohumblepie.blogspot.com/2010/04/macarons-101-french-meringue.html . Good luck, they're worth it!

      My “worst “ batch turned out to taste awesome! They were so good we ate them up. I didn’t have to mess the filling because they were screwed up. Moral of the story is you really can’t go wrong.

      The size of eggs are different. The white eggs should be weight, it's essential. You cannot just say 3 eggs. It doesn't work like that 😒.
      As an experienced macarons baker she should know better but she chose to mislead people? Hmm...and some morons said: mine turn out perfectly by using her recipe? OMG...liars are everywhere.

    to whoever that is thinking they failed...you haven't...this are not easy cookies, it requires a lot of practice and get the hang of it...keep trying, none of the best pastry chefs in the world started out being just great...they had to practice a lot too...don't be discouraged...i promise you that once you get the hang of it...you will make lots and lots always perfect..

    I watched several tutorials on making French Macron this was the one I used. My first batch turn out great. While they were baking I turned on the light in the oven and I got so excited my cookies had feet, my husband thought I had lost my mind. I filled them with French butter cream. Friends and Family loved them, I will be making them again, Thank you for the Tips My Tip is you live in the South like I do (Southern Alabama) because of the humidity It's better if you let them stand 45 minutes to an hour before baking.

    I did this today and they turned out great! I did adjust the recipe for altitude, aka two extra teaspoons of sugar in the meringue and only baking for 10-12 minutes. I got ridges and everything!!!

    This recipe worked SO much better than the other one I was using (Scranton Line). Much easier to make. Not a single shell cracked. Thought I over mixed because the batter wasn’t as thick as I expected but they turned it beautiful! New favorite recipe for sure thank you!!!!!!!

    Used ur recipe today as reccomended by a friend.. After a baked batch cracked a over the place i watch ur video again to see why u said that happen.. Under mixing so i took what i had left over and mixed a few times more for my first perfect batch or macarons... My excitment as insaw those little feets appears was out of this world.     Thanks for the tips Beth! One thing I often do is put a piece of paper underneath my baking paper with circles drawn on it. This is able to be seen through the paper, so when you're piping them, you use the circles as a guide and all of your macarons are the same size! Afterwards you just remove the paper and leave them to sit!
    I also often use a hair dryer to speed up the sitting process, as it makes the tops to tacky a lot faster.

    So I got a different recipe and it was a complete disaster. Once it started going south I found this video. It didn't save my train wreck but I used this for my second try and it was perfect! I don't ever bake so even if you are completely unexperienced - follow this and you will succeed!! Thank you so much, Beth!

    Omg thank you for this video ! So happy I did research and watched soo many vids and stuff and came across yours ! they were very helpful tips ! But I dunno if it's for anyone but 20 mins is way tooo long if you bite into them they are gonna crumble so I think 20 mins I a way to long I baked mine for 15 mins and they are still overbaked :/ maybe it's just my oven but I suggest to try 15 mins before going to 20 for anyone else trying this :) ! But love your videos !

    Thanks for your tips! Worked perfectly. I'm an indie game developer and when I get stuck on some bit of code, I like to switch gears and cook.     Hi Beth! I discovered this video a few weeks ago, and made some macarons today. I can’t believe this, but I followed your tips and they worked the very first time!!!
    I accidentally added the white sugar to the dry mix (I didn’t read the directions first), and realized that mistake when my egg whites were more like whipped up foam. I decided to add some sugar to the egg white anyways. I thought, okay this isn’t going to work, because now I have an additional quarter cup of sugar. But I decided to try anyways. I was unsure if I mixed it properly, but apparently I did, because they came out PERFECT. Thank you so much for the tips!! My first batch ever!

    Really foolproof. First time trying was nice results. Second time reducing powdered sugar by 20 percents exchange with rice flour. Still works!!! Thank you for video

    Just made them! On my first try i suceed! :3 thank u so much.
    I do have a question, i used 4 baking sheets (they were too small) i baked two at a time. The two first came out perfect. The other batch came out good, however, they didnt want to come out easy. I let them cool and took them off once they cooled. But on my first batch they came out even if the cookies were hot. What happened?
    Also my buttercream came out horrible, next time ill follow the recipe lol

      So you’ve watched countless macaron recipe videos to know everyone says “molten lava”, but didn’t bother watching molten lava footage and still found time to complain that you don’t know what molten lava looks like? Interesting.
      Its 3 years later and I hope you’ve found some very rare footage of what molten lava looks like.... I hear that footage is hard to come by........
      I hope you gave the macarons a shot. I took me about 6 tries to finally get the consistency right. Just make the mistakes and learn. Its simple.

    Thank you for this recipe!! I just made these after four failed attempts (not this recipe) and they held their shape perfectly!! No cracks or bumps. They were not hollow and had a nice glossy look even after cooling. Perfect rise and came out like those in the video, couldn't believe it. Cheers :-)

    I absolutely love macarons. I have never made them before. I found this video and decided to try. All of your tips are so right on. Today was very humid so I was concerned that these wouldn't come out right. They did not all come out perfectly, but on most of them, I GOT FEET!!! :) I was so impressed being my 1st time making them. They are so yummy and super sweet. I used strawberries for the filling but followed the same butter cream recipe. I LOVE this recipe. Thank you so much for sharing and for the tips.

    These macarons are definitely on my TO DO List. I heard not to make them on humid days.. Is there any truth to that?

      +DebaDoIt Studio Oh yes! They hate humidity! These cookies are such divas! ha! In fact I was making this video on a humid day (hence the shot of the cracked cookies) and we had to keep shutting all the doors and put the air on to make them work :)

      Humidity makes them crack and it won't puff up correctly 😭. I made them on a rainy day, despite everyone saying not to.

      +claudia miller i made this on a rainy day, perhaps i suceeded. You can turn on your oven to 100d celcius and just open it while your on the process of making these macarons. Then let it rest as long as possible, i would say minimum 30mins. When you touch the macarons and if it doesn't stick on your finger they're good to go in the oven. Hope this helps! Don't ever give up, I tried at least 4-5 times before i actually suceeded. 😊

    I love this recipe thank you for your help. I am 11 years old and love to bake. The first time i made theses they cracked. The Second time I got them perfect.☺️ that's because of my mixer . But I got a new one. I also need your opinion. I entered in a cookie contest for my church and I have to make 3 dozen cookies. I was wondering do you think I should put these in as one of the cookies . I was also thinking of doing you chocolate chip cookies and e double chocolate cookies. But I really need your opinion on the macaroons. Love your videos 😊

    I made my first batch ever of macarons using this recipe and they came out PERFECT!! thanks so much! Also suggestion- I didn't have raspberries on hand so I used strawberries and it was just as good!
