Question, in language settings when you pick Japanese for keyboard and user dictionary. What are the two options? I have no clue if it's kanji, katakana, hiragana.

One is a hiragana keyboard, and the other is a romaji keyboard. Which, is a keyboard that you use with a standard QWERTY layout but, you can still type in Japanese with it, and it applies to the latter. To be honest, it's a hell of a lot easier to use romaji.
