Chopper is Zoan type that change into an animal and has many forms and Ace is a Logia type which means their powers are from those who control a certain element. In japanese, they don't have different words for moustache or beard, it's the same word. Even for like cat whiskers, they use the same word as beard/moustache. I'm guessing it's translated as beard to keep with actual Pirate culture where people were named like red beard or black beard, etc
