Rökt Lax med Dillkräm -- Smoked Salmon and Dill Cream on Pancakes

  • Continuing on with wonderful uses for Swedish pancakes, I came across this recipe on the Swedish supermarket chain ICA's web site. This strikes me as quite in line with a lot of Swedish cuisine and so I decided I had to try it. The flavors go together very well. This makes for a wonderful light (or if you eat two, not so light) summer meal.

    Recipe:

    200g cold smoked salmon
    Black or green pepper to taste
    1/2c or one large handfull of dill, finely chopped
    100ml (scant half cup) of Swedish "fresh cheese" (can substitute ricotta)
    100ml plain strained yogurt (Greek or Turkish styles work well, as does Kvarg and Icelandic Skyr)
    zest of one lemon
    Juice of half of a lemon
    1/2 tsp salt
    1/2 onion, sliced thinkly
    Mix yogurt, cheese, dill, lemon juice and zest, slat, and pepper together . Let stand for 20 minutes.
    Serve on Swedish pancakes along with the smoked salmon, and slices of onion.
