And don't touch 'em until... Seasoning? Meh. Before, during and after is fine. Salt, pepper, and if you're like me, lotsa hot peppers. Medium to medium low is good. Gotta know whatcha got and time appropriately. Cooking oil? Lots! the more the better. This is not a diet dish. Shape? Big circle in the skillet is perfect. Tip it out onto a plate to flip. EZPZ. This ain't rocket science. Add fried eggs and bacon or sausage. Done!

I use Pam to keep them from sticking, and then I use an inch or two of oil for frying. I wash the potatoes, then dry, then grate and fry. Easy.

Right? Frozen and air-fried might be the way to go. I mean, a GOOD air-fryer will have presets for cooking them up just right.
