    January 1st is Haitian Independence Day. Haitians everywhere eat Soup Joumou (aka Squash soup) What is the significance of Soup Joumou (Squash soup)? After the revolution, the free Haitians were finally able to eat the soup that only the colonizers were able to eat. The soup came to represent freedom, emancipation and independence. On January 1, Haitians both at home and in the diaspora eat this soup to celebrate the first successful slave rebellion that transferred political power to its freed slave majority.
    How to make Soup Joumou:
    Ingredients:
    2lbs Chicken
    8-10 Potatoes
    1/2 of Whole Cabbage
    1 Cup Celery (cut them into small pieces)
    Thyme, Parsley, Cilantro, Rico (tie them together)
    1 Whole Green Squash
    Cloves
    Haitian Butter Lilly
    Maggie
    Epis Seasoning
