Thank you for advocating for what the string players need: space around our bodies for mic placement, balancing and blending ourselves, and basically allowing the string players to continue their own artistry and inviting them to be part of the recording process. It makes a huge difference and I can’t tell you how many crammed gigs I played as a young string player who didn’t know how to advocate for herself. Grateful to you for putting this out!

It seems very tricky to track strings if you’re not also mixing the song. If you have a well arranged demo then you will know how the strings should sound within the mix regardless of if they sound good alone. Otherwise you’re just shooting for flexibility. You have good ears, sir!
I've done hundreds of these string sessions and I would suggest a real stereo mic technique like ORTF or AB. Never double track a string quartet. Sounds terrible.
The headphone panning tip is actually a great one that would be easy to miss or not think about
