KETO Nut Clusters - Only 3 Ingredients!

  • This recipe for Keto Nut Clusters couldn't be easier. It only needs 3 ingredients and it fulfills that craving for rich, dark chocolate! It's a wonderful combination of crunchy, salty and sweet.
    It's Keto, Low Carb gluten-free and Vegetarian. Each nut cluster has only 2.6 net carbs!
    INGREDIENTS & DIRECTIONS
    1 9-oz package of Lilys Dark Chocolate Baking Chips* : amzn.to/3ooq9Ls (3 pack)
    1 9-oz package of Lilys White Chocolate Baking Chips* : amzn.to/3ooq9Ls (3 pack)
    8 oz of Planters NUTrition Heart Healthy Mix : amzn.to/3y3YAcY
    In a deep pan, heat 2 cups of water to a low simmer.
    Create a double boiler by putting a bowl over the water.
    Melt both package of baking chips in the bowl.
    As the chocolate melts, make sure to scrape the bottom of the bowl often
    so it doesn't burn.
    Remove the bowl from the heat.
    Once chocolate is smooth, add the nuts and stir until it's covered.
    Cover a large jelly pan with wax paper.
    Use 2 large tablespoons to make 20 - 24 nut clusters.
    Cool in the fridge (or on a covered porch if it's cold).
    Store in a covered container in a cold place.
    * = The ingredients in Erythritol and Stevia do not affect blood sugar, so the carbohydrates it contains are considered non-impact.

    I used a nut mixture that didn't have cashews because they are high in carbs. You can also use the traditional all peanut version. Really, you can customize this in different ways by adding peppermint extract or essential oil, unsweetened coconut or espresso powder.
    This combination of chocolates will give you a silky dark chocolate flavor. You could always substitute milk chocolate chips or do an all-white chocolate version.
    When I first started the Low Carb lifestyle, I thought that I wouldn't be able to have chocolate because it has to be sweetened with sugar. But, now with Stevia sweetened chocolate, these Nut Clusters taste exactly like the ones my mom made at Christmas when I was growing up. This special treat takes me back to my childhood memories of making all sorts of holiday cookies and sweets.

    UPDATE: I just wanted to let you know that I realized that the 5 net carbs per nut cluster is incorrect. It should be 2.6 net carbs because I forgot to subtract the sugar alcohols (from the erythritol in the Lilys chocolate). Sorry about that, but at least it's good news!

    Looks good. Those chips are about $8 a bag at Stater Bros. So those clusters cost over a dollar a piece.

    Hey just a thought a small cookie dough scooper works great and is faster too. It's less dishes to save you more time and so you don't have to use both hands. The result will be the same on the paper. Thank you for your inspiration.

    Another way to melt chocolate without a double broiler, is to put your 🍫 in a microwave safe bowl and defrost it in the microwave. This will melt it, but not burn it. Check it and stir it periodically.

      Greetings! Interesting - I haven't heard of using the defrost setting on the microwave. I'm going to experiment with it to see how well it works. Lilys is expensive, so I want to make sure I'm recommending ideas that work. I have the "Soften/Melt" feature on my microwave, so it's much safer to melt chocolate without burning it. But, some older microwaves don't have that feature. When I was first trying this recipe, I did use the microwave. However, I found that with larger amounts of chocolate, it takes awhile to get it to the right consistency without burning it. You do have to know your own microwave really well so that doesn't happen. I personally like being able to control the temperature better on a stovetop. However, if the microwave works for you, go for it! Thanks for sharing your idea!

    I just started the Keto diet a cpl weeks ago. I've already lost 8 lbs. I love breads and sweets so it's definitely an adjustment, but it's not as horrible as I thought it would be.. It's been pretty easy to find meal options that taste good and have low carbs, but It seems like a lot of 'healthy' or low calorie dessert type snack options in the stores still have a ton of carbs in them.. so thanks for this idea.

      Hi Tinx: It's great to hear that doing Keto is going well for you. I hear you about the love of breads and sweets because I'm right there with you. In my experience, Keto recipes for sweets are easier to find and make than breads. Right now, I'm working on pizza doughs that are Keto/Low Carb. I'll be rolling out (haha) some recipes in the next few months so I hope you come back. Yes, you're right about the store bought desserts/snacks having a lot of carbs even though they're labeled healthy and/or low carb. I ALWAYS read the Ingredients before purchasing anything new because even "organic" can have lots of unwanted ingredients (such as sugar).     I made this and just took them out of the fridge and they are delicious. The only thing is I couldn’t find sugar free chips and used semi-sweet and they are pretty sweet and I have a sweet tooth. Next time I’ll look for sugar free and try those.

      Hi Yvonne: You're so welcome! You can customize this to your preference - no, it's not necessary to put in white chocolate. You could use all dark, semi-sweet or milk chocolate (or a combination). I often just throw in whatever I have left from opened bags and it still comes out so delicious. I haven't tried it with cacao butter, but you could give it a try. You'll probably want to make sure that they're refrigerated so they don't get soft and messy. It's fine without, but I admire your adventurous culinary spirit!

    Do these melt in your hands when at room temp?

      Hi - good question! They typically will not melt in your hands as long as the room temperature is not too warm. If it's 80 degrees F or warmer, I would put them in the fridge. Normally, I keep them out on the counter and I haven't had any problems. Hope this helps!

      Hi Ana-Maria - you can adapt it any way you like. You will still need 2 9 oz. packages of Lily's chips, but it's very versatile depending on your flavor preference. I found that the white chips help mellow the flavor of the dark chocolate, but if you like the intensity of all dark, go for it! And, you're very welcome:)

    Shouldn't the nuts be soaked in water first? If so how long? Since you are using mixed nuts do the nuts need to be soaked for different amounts of time or hopefully this doesn't matter.

      Hello Teapot: The nuts would only need to be soaked if you wanted sprouted nuts. I don't use sprouted nuts in this recipe. If I do use sprouted nuts, I buy them at my local health food store. I used Planters Heart Healthy mix, which are roasted for maximum crunch. Hope this helps.

      @@DeliciousChemistry The purpose of soaking the nuts prior to eating, is to remove phytic acid (a natural anti-nutrient) found in nuts and seeds. This therefore helps us to absorb more of the nutrients found in nuts and seeds. I guess I will have to my own research into the amount of time one needs to soak all the different varieties of nuts, seeds etc. Thanks for trying to help.

      If you decided to go the homemade route to make the nut clusters, you wouldn't need to put the melted chocolate in the chip mold.

      Hi Julia - Great question! They can be left on the counter for several days. I've done that and they've been fine. However, if you live in a warm climate area or you like your heat up high in your house, put them in the fridge because they'll be pretty messy to eat. But, it would be a delicious mess!

      Hi Hermila: There is no sugar in this recipe. I use Lily's chocolate which uses erythritol instead of sugar. That's why the carb count is only 2.6 grams per serving.

      Hello Tom: Yes, food functions as energy for us, but I believe that it should be a source of pleasure also. People eat 2-3 times a day so meals should be something we look forward to and enjoy. It brings people together, it creates memories during holidays and celebrations, and most things we enjoy have food as a component in it. Of course, a person has to practice portion control when eating and exercise regularly. When I make these, I get great pleasure in making and eating them. It brings back wonderful memories of making them with my mom when I was a child. They also taste awesome! However, I only eat 1 per day so that I stay within my carb intake. They're a special treat and usually made only during the holidays. So, I see food as both function and pleasure because I don't think they need to be mutually exclusive.     Curious: the chocolate was only 55% cacao to begin with. Then you added the white, taking the "darker" cacao value percentage way down. So why didn't you just go for the lesser "Milk" chocolate instead?? While mixing the two, you came up with a lovely white and dark marbling effect! Then you totally incorporated it into a solid milk chocolate instead. Don't get it!🤔🤔 Totally confused!!🤔 The chocolate I eat is 90% cacao which is 9 grams carbs, including sugar, which is almost none, and 4 grams of fiber that makes 3 piece serving of only 5 net carbs. Very LOW glycemic. I only eat 1 piece, if that as it is very rich in intense chocolate flavor and full of antioxidants. Adding nuts to that just makes it better!

      Hi Mikki: I experimented with different versions before I posted this recipe. I'm not a fan of milk chocolate as I think they can be too cloyingly sweet. I came up with this combination because even with the addition of the white chocolate, the overall taste was still definitely a dark chocolate flavor. However, I encourage people to find the best combination for their particular taste and preferences. As for the marbling effect, I hadn't even thought of that - a really good idea for the future!       @@DeliciousChemistry I understand. When I do a darker chocolate I need to becareful because not everyone can tolerate the deep pure stuff.
      (Whimps!😂) As a diabetic, the "sweet" stuff I cant have, so the darker with antioxidants is best. BUT! Once in a while I do enjoy the Hersey w/almonds bar. Oh! And the plain milk chocolate with the 12 pieces, I take the pieces and use them each to decorate the tops of dessert things like cupcakes. Just stick it upright on edge in at an angle on the top of the frosting or in each "pillow " of stabilized whipped cream decoration around the top of a cake. FUN!

      Good morning! Yes, the mixed nuts would technically make this recipe more than 3 ingredients. However, you only need 3 items to make it. I tried it first with the standard all-peanut version, but found that using mixed nuts makes it more interesting. It took me awhile to find a pre-packaged mixed nut mixture that didn't have cashews in it (because they're high in carbs). I agree that it's hard to have just one, but like everything we eat, moderation is key. Thanks for stopping by!

      Hi Karan: No, you're not lazy! I found that trying to melt this much chocolate in a microwave got to be cumbersome and you risk burning the chocolate. Since Lilys is expensive, I found it best to use the double boiler system. It takes about the same time it would to microwave and you can control the heat much better so you don't burn it. I make a delicious dessert using a tin of full fat coconut milk and a bar of high cocoa chocolate 90 or 100% and gently melt the chocolate in the milk over a low heat. Add some sweetener and vanilla, place in ramekins and chill overnight. Add nuts, unsweetened chopped ginger, berries or whatever rocks your boat.

    Some of these nuts are not Keto recommended (peanuts and cashews) and these canned nuts are much to high in salt.
    Fresh raw mixed nuts much healthier.

      Hi Janine - The nuts I used do not have cashews in them - it took awhile to find prepackaged mixed nuts without them. I do consume peanuts in small amounts (as well as peanut butter) due to their higher carb content. There are only about 5 peanuts in each cluster. As for the salt content, there's 16 mg. of salt for each cluster which is not a high amount. I have to watch my sodium intake so I made sure that the sodium amount was lower. While I do agree with you that fresh raw nuts are healthy and I do use them but roasted nuts are needed here for the crunchy texture. Thanks for looking and posting your comment!

      Hello Peter: There is NO sugar in these nut clusters! I used Lilys baking chips which is sweetened with erythritol and Stevia, NOT sugar. People who are on Low Carb or Keto cannot have sugar as it is very high in carbs.       Hi Susu: White chocolate is essentially cocoa butter, a healthy fat with 0 carbs. Then milk powder and sweetener is added to it. Lilys brand uses erythritol and Stevia to sweeten, which has 0 carbs. So, if consumed in moderation such as this recipe, it is considered a Keto food. I hope this helps. Thanks for asking!

      Even IF it were still 5 carbs, it would be Keto friendly because it allows people to have the option of being able to have it if it falls in their carb intake. We're all adults and each person has to make their own choices about how they're going to "spend" their carb currency each day. While I love cheese, there are times when I want chocolate, not cheese. What I'm trying to present in my channel is as many different options for food choices that is Keto and Low Carb friendly. I'm grateful that I CAN have something like this nut cluster because when I started on my Low Carb journey I thought I would never be able to have chocolate or sweets again. It's hard right now for everybody - let's be gentle with each other.

      Hello Prius Dave: I am rather confused by why you consider Planters not to be "real" nuts. I chose this new series of NUTrition because it did not have cashews in it which is hard to find prepackaged. They have a lot less sodium in it, which is important for people like myself who have to watch their sodium intake. Of course, you can choose whatever nuts you prefer, which I stated in the Description section. As for the gas station reference, it would be challenging to find a candy bar with 2.6 net carbs in it that taste as good as these nut clusters. However, you are certainly welcome to state your opinions - maybe next time with a more gentle club.
