Great job again! In my town in Washington state a bag of red potatoes are $4.86 but a bag of white potatoes are$1.77. They sell red potatoes individually for 38 cents each. I really like that you added the cost of sun dried tomatoes to your total even though you had them already in your pantry. Thank you. So many other CZcamsrs don’t add the cost to their total.
I'm a big cilantro fan and not sorry for it lol. Girl, I LOVE your ideas! We're having to tighten the food budget. We have nearly $15,000 in hospital bills and it took all of our savings. My security is gone and I'm afraid now. So good health and budgeting is crucial more than ever. Anyway, we're trying all of these, substituting the meat as we don't eat pork. Love y'all!

In my house we call the tacos “Tacos de Papa”. I even add bacon 🥓 pieces and slice some green onion and throw them in the filling for more pop. Top with shredded lettuce. I also top with homemade salsa, sour cream and sprinkle with Parmesan cheese if no cotija cheese is available. And bam 💥 dinner! Love your videos! Kids are so adorable! ❤😊
I worked at Taco Bell back when they cooked the refried beans from scratch and cooked raw beef and added the seasoning (35 years or more ago!). When we cooked the beans, we added water, salt and lard. I add bacon grease to my beans if it’s soup, and lard if it’s taco night. Makes the beans even creamier and “it hits different”!
Love these meals! I made the potato casserole substituting hamburger as I had no sausage. My son loved it and he doesn’t eat mushrooms! We had leftovers… so, tonight I am going to make the quesadillas using the left over potato casserole. Two meals out of the one! Yay! Thanks Brooke!
So I used to spend so much money on the frito-lay bean dip until I found the perfect recipe for a homemade version. All you do is add taco seasoning a little pickled jalapeño juice and a few pickled jalapeños to your liking. So easy, simple and oh such a family favorite 😍
I have a jar of oil in my second fridge that is strictly used for frying tortillas in. I have done it for years and saves my oil because I don’t have to get new oil every time.
Another tip from your Baltimore City Eye Talian, you can do a simple oil pasta with garlic, also, my MOM had 10 mouths to feed, so sometimes you can get frozen spinach or broccoli cook it and mix it with the olive oil and garlic, makes a good healthy filling meal!
Or Fettuccini al Burro (fettuccini with Butter). To save money, use whatever pasta you have! Whiling traditional, when fed is best, the heck with tradition.
Oh this is a fabulous idea, and frozen or fresh spinach would be so amazing.
This tip/using everything you have idea isn't for everyone. But I use some of my garden tomatoes (or even store bought ones about to go bad) and dehydrate them and make homemade "sun" dried tomatoes with them. (Can even use your regular oven just monitor the heat more). Then I have a gallon sized bag of dried tomatoes(I store in freezer). Lasts the whole year. They taste so good. And even the overly dried ones have a sort of crispy, chip like texture. They add such flavor to so many dishes.
Part of using what you have is knowing when it’s advantageous to freeze or otherwise preserve things so they don’t go to waste! I traveled the weekend after Thanksgiving and made sure to portion and freeze all the leftovers before leaving. I’m still chipping away at them. 😂
I just love the way you juggle your budget. I'm in the fortunate position that my husband and I are retired so we don't have such a tight budget. We live in Scotland, UK so the recipes are totally different here as are the prices. You have such a lovely family, I just really enjoy watching your videos. Just a little tip. You can save money by making your own refried beans. Just add a little bit of oil to a pan & heat it, then add a can of undrained pinto or black beans. Let them cook for a few minutes and then mash with a potato masher. My boyfriend is Mexican and I watched his family make them this way. Tastes better and so much cheaper when a can of beans is .78 at my local Walmart :)

Girl, let me tell you, in our area our food pantries give a LOT of beans and rice out to people free. I make and can up all my own beans in a jar and make my own refried beans from all kinds of beans! You can do the same!

The last recipe you did is very similar to one that I make. I use flour tortillas, and I make cheesy mashed potatoes with whatever cheese I have on hand, and mix in Tuna. I add more cheese on the top & melt it in my toaster oven. Top it with lettuce & Tomato. I don't have a name for mine either, but tastes really good. Tuna Melt Tacos maybe. LOL

You can also put those corn tortillas on a big baking sheet. Spray each side with some oil spray. Cook like 5min per side. That’s our fave way to do tostada
Hi Brooke, this is Sue, l make the olive oil, garlic, and sundried tomato's, l use about half a jar of the SD tomatos, we like them, and dice them up and add alittle of the oil they come in, OMG game changer, but the next time l am gonna have to try the artichoke hearts in them, l put them in scalloped potatoes when l make them just one layer, yum.

I love black bean tostadas! I boil my beans and grind them in a blender. I use queso fresco and I like avocado and shredded cabbage on mine! I also fry my own shells. Yummy. Love your videos they are always filled with great ideas. 🌸💕😊

Great job Brooke… Here’s a quick tip since you have a decent size family there cook a whole tortilla smash the filling on top put a second tortilla on the top like a little sandwich flip it over then cut it in half when it’s done you’ll spend half as much time cooking the quesadillas and they taste exactly the same:)
