    Recipe of making Dahi Baray
    Vegetables
    1 medium sized onion thinly sliced
    1 tomato without seeds make small pieces of it
    3 medium sized boiled potatoes, make them cool down for 30 minutes then make cubes of them
    1 cup boiled white chickpeas
    Mix all these 4 things in a bowl, cover them with paper towel and keep in fridge while making other stuff.
    Yogurt mixture
    2 1/2 cups of yogurt
    1 cup of whole milk
    1 cup of water
    Mix yogurt, milk and water gradually with a whisk to get a smooth texture of yogurt mixture
    Batter for Baray
    1/2 cup of gram flour
    1/4 tsp of salt
    1/4 tsp of red chili powder
    1/4 tsp of baking soda
    1/4 cup of water
    A bowl of tap water to dip Baray
    Mix everything together and make a thick batter for Baray
    Batter for phulkies
    1 cup of gram flour
    1/2 tsp of salt
    1/8 tsp of red chili powder
    1/4 tsp of baking powder
    1/2 cup of water
    Mix everything together to make a thin batter for phulkies
    Spices to add in Dahi Baray
    1/2 tsp of salt
    1 tsp of coriander powder
    1/2 tsp of garam masala powder
    1/4 tsp of red chili powder
    1/2 tsp of Shan Chana chat masala
    Method
    To fry Baray and phulkies make oil hot at medium high flame for 3,4 minutes, first make phulkies, with the help of spoon add batter in circular motion in hot oil. Keep the flame medium high and fry them for 20 seconds on each side. They took very little time to cook. Make them in 2 ,3 batches, before adding them in Dahi Baray make them cool down for 40 seconds.
    To make Baray keep the flame medium low and make 6 ,7 barays at a time, use tablespoon to add Barays in hot oil keeping the space between them so they can puffed up easily, cook them for 15 seconds on each side and take out them on a paper towel. As they are warm add them in bowl of water and dip them in it for just 5 seconds so they can absorb water and become more softer. Take them one by one in your hand palms and press gently to squeeze out some water from them. Set them in a plate,
    Assembling of Dahi Baray
    Add vegetables and chickpeas in a bowl, also add half of phulkies (half can be serve with Dahi Baray) now add yogurt and keep one cup of yogurt from it to pour over Dahi Baray. Now add salt, coriander powder, garam masala powder, red chili powder and Chana chat masala in this mixture. Mix everything together and pour it in a serving dish, set Baray on it and pour 1 cup of yogurt mixture over Baray. In this way Baray will give a beautiful look and stay soft. Sprinkle some red chili powder and garam masala powder over Dahi Baray and garnish it with cilantro leaves. Most delicious dahi baray are ready to enjoy inshaAllah.
    Servings: 4 persons
    Note. You can keep baray in fridge for 2 days , keep them covered with plastic wrap or a plate so they couldn’t become dry.
