I never liked tripe but loved kidney and liver. My late Dad liked tripe and onions. Great that you eat every part of the animal. Have you tried Haggis or Faggots.

That part she is cooking is not the intestines....its the cow stomach Intestines is usually more round And bigger than the goat or other smaller animals.
