    How to make Shanghai Mooncake Recipe
    Today I would like to share this Shanghai moon cake recipe. No need mooncake mold, very convenient. This recipe of Shanghai Mooncake with Yam/Taro and Salted Egg is delicious. The pastry skin is similar to the pineapple tart, it melts in your mouth. Do try at home.

    Shanghai Mooncake Recipe
    1) Mooncake filling
    (a)Yam/Taro
    -Yam/Taro 480g
    -Some purple sweet potatoes
    -110 grams of caster sugar
    -35 grams of cooking oil
    Method: Steam on medium heat for 25 mins until soft. Transfer to wok or a non-stick pan and press it into puree. Add in sugar and oil. Slow cook until it become paste. Let it cool.
    (b)store bought premium pineapple paste
    2)6 Salted egg yolks
    Method: Coat with some rice wine. Steam on medium heat for 10 mins. Let it cool.
    3)Mooncake skin/pastry
    -230 grams of all purpose flour
    -25 grams of icing sugar
    -40 grams of corn flour
    -45 grams of milk powder
    -1/2 Tsp salt
    -1 egg and 1 egg yolk
    -140 g cold unsalted butter, cut into small pieces
    Method: Sift in and mix together all purpose flour, icing sugar, corn flour, milk powder and salt.
    Then use a spatula to mix, and then rub the butter into the powder with your hands and then knead it into a dough.
    Add in the egg. Knead into dough. Do not over knead. Let it rest for 30 mins.
    4)egg wash: mix 1 egg yolk, 1/2 Tsp oil, 1/2 Tsp condensed milk (this portion can wash about 6-7 pcs)
    5)Shanghai Mooncake method:
    -prepare 6 taro paste balls, about 50g each. Wrap salted egg yolk with taro paste. Roll it round.
    -prepare 6 pineapple paste balls, about 45g each.
    -divide mooncake pastry into 12, about 46g each. Roll it round.
    -flattened the mooncake pastry and wrap with taro filling. Roll it round.
    -repeat process until done.
    -Put the mooncakes on a lined baking tray. Preheat oven at *160°C, bake for 15mins.
    -after 15mins, give the mooncake 2 times egg wash. After 2nd time egg wash, put some black sesame seeds.
    -Preheat oven at *160°C, bake for another 5-10 mins.

    1) 月饼馅
    (a)芋头
    -芋头 480g
    -一些紫薯
    -110 克细砂糖
    -35克食用油

    4)蛋液:蛋黄1个、油1/2茶匙、炼乳1/2茶匙混合(这部分可以洗6-7粒左右)
    5)上海月饼做法:
    - 准备6个芋头丸,每个粒约50g。 用芋头包裹咸蛋黄。 把它滚圆。
    - 准备6粒凤梨馅,每粒约45克。
    - 将酥皮分成12份,每份约46克。 把它滚圆。
    - 将酥皮压扁,裹上芋头馅。 把它滚圆。
    - 凤梨馅的也一样做法。
    - 重复过程直到完成。
    - 把月饼放在烤盘上。 烤箱预热*160°C,烤15分钟。
    - 15分钟后,给月饼上2次蛋液。 第二次是啊上蛋液后,放一些黑芝麻。
    - 将烤箱预热至 *160°C,再烤 5-10 分钟。
