Coconut Milk Curry with Pumpkin (Gaeng Gati Fuk Tong Moo แกงกะทิฟักทองหมู ) and Young Pumpkin Stir Fry with Prawns (Pad Yod Fuk Tong Goong ผัดยอดฟักทองกุ้ง ). Thai Food Recipes - Home Cooking in Thailand.
In this video @aorneats shows you how to cook 2 very easy and delicious Thai pumpkin dishes. The recipes are:
Young Pumpkin Stir Fry with Prawns - Pad Yod Fuk Tong Goong
- 10-15 Pumpkin vine tips, cut into 30mm long pieces
- 2 tbspn Oil
- 2 tbspn Oyster sauce
- 1 tbspn Soy sauce
- 1 tspn Raw sugar
- 3 tbspn Garlic, crushed and finely chopped
- 100 gm Shrimp, peeled and cleaned
- 100 ml water
METHOD
1) Heat oil over medium heat and then add the garlic and stir fry till fragrant.
2) Add prawns and stir fry for about 30 seconds, then add pumpkin vine tips and water and stir fry for 1 minute.
3) Turn flame to high and stir fry for 1 more minute.
4) Add soy sauce, oyster sauce and sugar and stir fry till done (around one and a half minutes).
Coconut Milk Curry with Pumpkin - Gaeng Gati Fuk Tong Moo
- 200gm pumpkin
- 100 gm pork
- 20 Thai sweet basil leaves
- 2 kaffir lime leaves, torn into quarters
- 500 ml coconut milk
- 1 tbspn red curry paste
- 1 tbspn palm sugar
- 1 tbspn shrimp paste
- 2 tspn light soy sauce
- 1 tspn stock powder (Any stock powder is fine. We used pork.)
METHOD
1) Bring coconut milk to boil over medium heat, stirring occasionally.
2) Add curry paste and mix in.
3) Add kaffir lime leaves, then add pumpkin and cook, stirring occasionally, till pumpkin is soft.
4) Add pork and bring to boil while stirring.
5) Add stock powder, palm sugar, shrimp paste and light soy sauce and mix in.
6) Turn off gas and add Thai basil. Mix through and allow to stand 1 min before serving.
Serve with steamed rice and enjoy :)

I love pumpkin; especially when its charred a bit in the oven and you get that sweetness coming out.

wow!! fantastic dishes friends 😋 never in my short life of ' stuffing my face' would i have imagined 'pumpkin greens'... especially with fresh Thai shrimps ** over 60% of North American shrimps come from your coastal waters !! I have recently gone back to cooking with fresh garlic, ginger paste, and recipes like these you have shared with us are very much welcomed. @@darrenb3 Thanks Darren for a reply,truly appreciated.Yeah my relatives they like to make it.Indeed tasty and cheap as well.Shrimp paste from Koh Lanta that is great choice.It is unique dish,i am surprised how come it is not sold everywhere on street markets.Especially in Northeast Thailand restaurants,some massaman restaurants have it.It is supposed to be everywhere.Though most difficult part is to shave pumpkin and cut it,sometimes pumpkin it could be quite hard,especially if there is wrong knife used for peeling off the skin.I see it was well made with great peeler.I must get one someday.Thank you for great video,i am looking forward for next video.Your videos always tasty and refreshing.Because them brought me to Thailand's food,when i knew nothing about food in Thailand.But i think it is important to try,so that it can could be completely experience by oneself.Actually it was my mom who suggested your videos a couple years ago,because she was searching on Smart TV what Thai people eat in Thailand.We planned trip back then 3 years ago around.I guess youtube algorithm is smart.Well,i am lifetime subscriber and keep watching,it is always interesting everytime.Keep it up!
Both dishes look very delicious! I just have a question for you. Could a person substitute fish for the pork and shrimp? I don’t eat a lot of pork, and only eat shrimp occasionally. I have taste for catfish, lingcod, and Pacific rockfish. I currently have some rockfish in my freezer.
Yes, you could substitute in any protein of your choice.
Hi Darren, Aorn, Can you describe the flavour of the pumpkin stems, are they like any other green leaf vegetables?
I would describe them as devoid of any perceptible flavour, but with a delightful crunchiness and tenderness. They soaked up the flavours of the sauces perfectly and that was all I could taste. Highly recommended though, that dish is great!

I never knew you could eat the vines on pumpkin? I wonder if you could eat cucumber vines? Someone please tell me that one. Bc I love cucumbers to death. Dill ones the best. Oh my grandmother made some of the best dill pickles & hot dill pickles. I wish I would of learned her recipe before she died. I kick myself every summer on that on & have not found one to even come close to what she use to make. Will still contentious to search high & low for a replacement. I'm bound & determine to find one.

We used pork stock powder in that dish, but whatever flavour your preference is will work perfectly.
