i do think a little intro about what vodka sauce, what you do when you make and what you're looking for would've helped this one. Still fun.
Jim- Now that you taught me how to make sauces, I don't feel so intimidated by doing so. I prefer the flavor of homemade vs the store-bought any day. I just have trouble keeping fresh basil & parsley good because I don't use it every day. Jim- Can you give me any tips to keep my fresh herbs longer? Thanks.

Thanks, I'm not a big fan of the format. I like the way GMM does blind taste tests where they show the audience the actual thing instead of blindly watching them eat random food.

That's what I was thinking when he said they do round numbers now. I didn't have a problem with it, I watch Dave Portnoy's 1 Bite Pizza Reviews and he's all over the place with the decimal scores 😂 just keep doing what you guys want to do

Came here to say this! James is good about sticking with his own opinions and he really has a well developed palette (especially for a teenager). Speaks to growing up in a household with awesome home cooked food. :D

The interesting thing I find is the relative lack of correlation between price and taste. Thanks for doing the reviews.
And also interesting, as James pointed out, some products taste better than others from the same brands, eg: Whole Foods 365. The pizza was very good but the vodka sauce wasn't as good. I found that to be the case with a lot of brands.
Same as his other jar tests too. Price doesn't always mean great!

I'm a college student with very little time and I've been buying Bertolli sauce for my fast dinners. I'm glad to see that it did the best out of all the purchased ones!

Same here! I've been buying Bertolli since before I can remember and always been really happy with it. So great to know that they gave it the highest rating considering the price tag. The flavor really pops, and the texture is nice and smooth.

I really appreciate how you share your passion for cooking with your son. We need to get the next generation back into the kitchen, and cooking with fresh, non GMO foods. It's sad what has been done to the food supply in the US, but with time and effort, you can make delicious food in your kitchen that wont send you to an early grave.
I made two gallons of your Sunday Gravy recipe yesterday, and it felt great knowing the ingredients are basically tomatoes, onions, salt, pepper, sugar, olive oil, and juice from the sausage and pork chops.

Love these! For the future I'd recommend arranging the sauces in order as you go, then applying scores at the end. You can rank and rate them individually, so you don't have to agree of course. Your son has great input, you can really tell how he's learned from you guys!

I'll give this video a 10. After your second marinara taste test I went out and found some RAO's and just love it! because my families favorite was Prego, which you guys gave the embarrassing score of 2. I'm going to start making my own as you suggest! Using RAO's as my target.

Rao’s vodka is what we use as marinara 😅 I agree - not super vodka-y, but I really love it.

It’s an interesting exercise and you all exhibited some of the core principles in flavor and taste. Fats carry flavor but textures conduct them , so it was very interesting how both of you remarked on the texture being a key factor….nothing worse than a "mealy" purée augmented by synthetic flavor profiles….I too have never tried a jarred vodka sauce and your testing confirms I don’t need to. If you do a test on jarred Alfredo sauce you have my sympathies in advance.😂
I thought the point of vodka sauce is that the tomato reacts to the alcohol. If it gets heat canned, seems like the process would negate that reaction.

The jarred alfredo sauces I have tried have ranged from 0 to 3. Simply awful. The Sonoma brand I purchased I added more butter and parmesan, because it had a sharp flavor.

I buy Rao's marinara and vodka sauce and add cream and parmigiana reggiano to it. but I also make a sunday sauce occasionally since watching Jims video on how to make it. I started cooking because of Jacques Pépin; he is & will always be the master Chef, to me.
I now feel more confident in my ability to cook because of Jim (way less intimidated by recipes). I can whip up one of Jim's recipes in no time & they always taste great.
I also cook using Gordon Ramsay's recipes when I have more time to spend in the kitchen.

I absolutely love your shows and your passion for cooking reminds me of my own. I like how you are in the kitchen. The kind of foods you cook are real not stuff we’re never gonna do, but just a real parent cooking for his family.
When I first wake up in the early mornings, I’m in a great deal of pain, so my routine is I sit up. I ‘immediately take pain medication and then to keep me occupied while I hang on for them to kick in I watch your channel and then time flies by so much easier. I love how often your wife and son participate in the video you’re making. Is she the one behind the camera the rest of the time? I just want to thank you very much🌻

I agree 10,000% about dried basil & Italian seasoning! I also feel that way about garlic salt and garlic powder. To the point that I eliminated all of them from our household quite a while ago. Unfortunately, my husband (who doesn’t cook) noticed and insisted we “need” them..🙄 Bought more to make him feel better but I’m never using any of them! Fresh is the way!!
I saw him mention that in another video. Would you explain further as to why you don't like it? I'm looking to improve my cooking.

@@felixconlon7049 I’m sure it’s more personal preference than anything and this is just my two cents: dried basil has a very different flavor than fresh (it’s almost more like mint when dried) & seems to lose its complexity compared to fresh basil. Fresh basil adds such an exciting freshness and brightness to dishes vs. murky dried basil. I’m a big fan of dried oregano but dried basil might as well be a completely different animal than its fresh counterpart!
@@confusingdalek709 I’m just such a huge fresh garlic fan - dried doesn’t add that same punchy kick that fresh garlic does, or that subtle sweet roastiness that fresh garlic has when sautéed. I’m sure more personal preference than anything though!
@@roxannewhite9554 ah, that's understandable. garlic powder still makes a good mix in imo, though, for things where fresh garlic might not work texturally (e.g. in some kind of seasoning mix). also good in my experience for adding extra flavor to boxed mac and cheese alongside some chipotle pepper powder, but i bet fresh garlic can do that one well too.
I am enjoying these taste test videos. I have not read all the comments so I'm not certain if this has already been suggested, but I think it would be interesting if one item appeared more than once in the lineup. I am curious if the rating would be the same or if position in the judging was a factor in the rating. Good stuff, great channel-- thanks for all you do.

Great comparison. Loved the comments, you know what good Italian food is supposed to taste like. BTW, I consider teenagers "professional tasters." On more than one occasion I have tried out new recipes or preparations on my church youth group and just observed their reactions and listened to their comments. More times than not they were spot on. Also agree when it comes to vodka sauce, make your own!

I just discovered your channel while looking for a Vodka Sauce recipe, or to see if there was a worthy store bought option. You, fellas, just earned yourselves a new subscriber. Not to mention pretty much everything about your boy reminds me of my own 14 year old son. They look so much alike they could literally pass for brothers, right down to the hair and braces; which is strange because we're mostly Irish. These videos are great.
The only jar vodka sauce I have ever used is Emeril’s & I doctor it up with Romano cheese, fresh parsley, S&P.
I once worked as VP Marketing for Mrs. Smith’s Bakeries. We had pie “cuttings” where we tasted various formulations for the same product. We have 22 different pumpkin pie formulas at one cutting.
This was a pretty illustrative demonstration of how a homemade sauce can be SO superior that it makes me think, "how bad of cooks are people who would think a jarred/canned is better than what they could make?" It would be interesting to see a video of people who claim they can't cook make a marinara or vodka sauce and put it against what they normally buy. (Probably a different channel than yours, but still an interesting investigation.) Thanks to Tara for setting up the blind study! When is James getting his first restaurant job? 🙂
i have to trust you guys. my husband and i are not good cooks, but we did our own taste test for marinara, and we had the same top two (victoria & rao's), but in reverse order. tasted side-by-side, victoria is less sweet (and saltier) than rao's, so we put that at #1, but we were torn. now, i use 3/4 victoria and 1/4 rao's for the best jarred pasta sauce.

it makes sense to me, somehow, that vodka sauce wouldn't do as well in a jar. somehow i worry about the cream ingredient properly surviving the jarring process.

Great video! Would it be possible for the next video like this to show the brand to the viewers only while they’re tasting it-so we kind of have an idea what brand it was right when they graded it? When you guys began showing the jars towards the end, I was totally lost and I forgot who gave what number to what sauce! Lol.🤪
I just recently made penne alla vodka, so I went into it not knowing how it tasted. It was amazing. I used Bertolli too lol. Now I have to make my own. Thanks for giving me an idea of how it should taste like.

The other day I bought a jar of the Bertolli’s vodka sauce which I have yet to use. Today I saw your video. I was happy to see the results of your tasting. Looks like I got the best jarred vodka available. At least of this grouping. Thanks for all the great advice. I’m thinking it may be time to open that jar.

Great video! I make my ala-vodka sauce similar to yours, except I use a can of San Marzano tomatoes instead of the tomato paste. I made a fascinating discovery while making my last batch that you might find interesting. I cooked down the onions add some red chili flakes and a tbls of tomato paste cooked it some then added white wine and let that cook off and then added the vodka and let that cook off. Then I hand crushed the tomatoes and added them in. Before adding the cream and cheese I tasted the sauce and it was amazing just as is. Probably the best tomato sauce I ever made. Hope you give it a try it will blow you away.

Bertolli is my absolute favorite jarred sauce! The alfredo legitimately tastes like I made it myself, it's soooooooo good and for the price I was very impressed!
Love your videos... keep it going. For a jar vodka sauce, there is a small distributor out of northern VT, Bove. Try there vodka sauce... better than me making it!

I'd echo this bit of advice. If there's one thing that has really turned around my cooking, it's been making my own sauces. I always end up with something that's better than any sauce I can buy from the grocery store.
Sauces are similar to games like Chess and Go in that the basics of them are simple and you can learn them quickly, but mastering them takes time and practice, but wow - the result is a skill that you'll cherish and will reward you the rest of your life.
