    My daddy worked on many a ranches in the Texas panhandle since he was 14 years old. I have lived on several growing up. I also married a ranching preacher who worked on some of the same ranches. I remember neighboring days and my mamma cooking for the hands and those who came to "neighbor" on round-ups. I don't think there was anything my mamma couldn't cook. She ran her kitchen and outdoor grills like a sargent! She made the best hot rolls, biscuits and whole wheat honey bread. I went on to culinary school, but I never forgot what she taught me. Her cooking was sampled by lots of my chef friends and they always walked away with some of her recipes and high praise for her cooking. lol

    Howdy, Kent! 51yr old Texan here… Thanks to you, I overcame my fear of ruining a brisket. We recently invested in an electric pellet smoker; yes, it’s cheating to have the temp dialed in and maintained by technology, but, I’m OK with these training wheels that will allow me more cooking time.     Hey Cowboy Kent and family. I haven't seen anyone since my Uncle's and other male family members cook the brisket - burnt - ends in years.     We just got a new pit bull puppy in January. He was abandoned down by the river and was about a month old. We named him Rio. Those rescue dogs are such wonderful companions and they really seem to appreciate what you’ve done for them. Our little mini dachshund hates him but she’s about 10 years old and has little patience for his energy levels. Our Pointer, Roscoe D. Wundermutt, gets onto him when he gets out of hand but they do enjoy playing together when they think we aren’t looking. ALL of us are having to keep him in line because of his excess energy levels. But he’s got the makings of a truly amazing pet. I’m in a wheelchair quite often. He’s got tons of zing to burn. I might just have to harness him up and let him drag me around, save my arms some work and reserve a little energy of my own. Blessings y’all!

    I've been wanting to smoke a Brisket for awhile now and I Bought a Pit Barrel Cooker after I watched this video, it came in Friday and Saturday I smoked a Brisket following this exact recipe. It turned out perfect, lots of flavor and tenderness. Great recipe @CowboyKentRollins and I recommend the Pit Barrel Cooker to anyone wanting to get an easy to use, inexpensive smoker.

    I have been the proud owner of a Pit Barrel Cooker for four years and cooked on it at least once every other week. I was surprised you don't use the steel rods to control temperature but then again, my smoked brisket never looked so good. Next time I'm trying to cook it your way.

    Great recipe, great short cut for brisket Kent, a big plus being the company is owned by veterans. I always try to go out of my way to support our vets, and here in kentucky, we have a service called the christian blue pages which has listings for products and services for just about anything, ie: plumbing, electric, handyman , numerous products like appliances , tools new cars, etc... you name it, and i always go out of my way to try and patronize them. Also, you got a real good bark on that brisket in that short amount of time that it normally takes. You knew them pups were gonna eat that, lol. Wife and i are dog lovers, we have 3, feed em' deer steaks, premium dog food, they are so spoiled they'll turn their nose up at an offbrand hotdog, lol.     Hello Kent and Shannon! That brisket sure looks delicious! Your rescue is a really beautiful dog. I love his black and white fur. I would really love to have another dog someday. I had two wonderful pet Labrador retriever dogs who have since passed on to the Happy Hunting Grounds and I am currently the Mama of a very ornery house cat! My niece gave him to me because she was moving to a new apartment complex which did not allow pets.
    I do not think my cat, Cairo, who is a mixed Tabby/Egyptian Mioux, would appreciate another animal on his turf. Although he came with his name I think he really should have been called, "Pharaoh" by the imperious way he stalks around the house! But he has been a blessing to us especially when it comes to keeping the field mice out of the kitchen during the cold weather months! Thanks for posting this video! Take care & God bless!

      Hey Phil, I use the relish with my breakfast all the time eggs, hash browns and refried beans mix a little or a lot of relish in the beans and on the eggs. You can't go wrong with the relish on any meat dish either.
