Day in Nara Japan│ 奈良 Part 3

Visiting Nara was truly one of the most exciting days ever!
Spending time with the deer and being entertained by their liveliness, persistence and playfulness. What an unforgettable day, definitely recommend exploring Nara.

That sushi though! I have never seen it wrapped in a leaf before. Is the vinegar in the rice and does it make it more sticky? 🍣 x

The vinegar and leaves keep the sushi fresher for longer. All sushi has some vinegar, but this had slightly more. The mackerel was very sticky, not really sure why though. I think it’s just something to do with the starch rather than the vinegar. It was delicious 😋🤤

I’m a citizen of Nara.
This sushi 🍣 is "Kakinoha Sushi(柿の葉寿司)", a specialty of Nara Prefecture. ☝️
As the name suggests, it is wrapped in persimmon(Kaki、柿) leaves. ☺️
Sushi🍣 is wrapped in persimmon leaves, which is the wisdom of the old people who tried to keep the food at room temperature for as long as possible. 👵
In addition, I think that the stickiness of mackerel sushi is due to the stickiness that spreads when the fillet of mackerel is soaked in vinegar by spreading kelp. 🤔
In Japanese cuisine, kelp is a plain ingredient, but the dashi(出汁) stock that oozes out of it plays an important role in enhancing the elegant flavor of Japanese cuisine.🤗🍀

私は奈良市民です。
この寿司🍣は、奈良県名産の「柿の葉寿司」です。☝️
名前が示す通り、柿の葉っぱに包まれています。☺️
寿司🍣が、柿の葉に包まれる事によって、少しでも常温で食品の日持ちをさせようとした、昔の人の知恵がそこにあります。👵
なお、鯖寿司のネバネバは、鯖の切身を酢に漬け込む際、昆布を敷く事でそのネバネバが移るせいだと、私は考えています。🤔
日本料理で、昆布は地味な食材ですが、そこから滲み出る出汁は、日本料理の上品な旨味を引き立てる、大切な役割を持っています。🤗🍀
