Vegetarian Cauliflower and Potato Chapli Kabab or Fritters Iraqi Style

  • My dear mom used to make these a lot while growing up. She used to make them on Friday along with lentil soup and especially during fasting and lent days.
    Ingredients
    1 small head of cauliflower
    1 large potato
    1 small onion, finely chopped
    2-3 garlic cloves, finely chopped
    1 cup green onion, finely chopped
    1/2 cup cilantro, finely chopped
    1/2 cup parsley, finely chopped or 1 Tbsp dry parsley
    1/4 cup flour
    1 tsp baking powder
    1 tsp black pepper
    1 tsp salt or to taste
    1-2 tsp curry powder
    1/2-1 tsp turmeric powder
    1/4 tsp red hot pepper or to taste
    Water
    Cooking oil
    -Clean, wash cauliflower and boil in water for a few minutes until it becomes tender but not mushy. You can also cook it in the microwave. Just place the head of cauliflower in a safe microwave bowl with a little water then cover with plastic wrap or microwave cover. Cook for a few minutes until it becomes tender. Chop the cooked cauliflower into small pieces and place them in a large bowl.
    -Boil potato in water or cook in the microwave as we did with the cauliflower. Chop into small parts and add it to the cauliflower.
    -Add the rest of the ingredients and mix really well. If the batter is very thick then add little water so the batter becomes a bit soft.
    -Heat oil about 1/2 cup in a large non-stick skillet over medium heat at 350-375F.
    -Use your hands to make patties into oval or round shapes or use a 1/4 cup scoop and pack the mixture into the scoop. After releasing it into the skillet, gently flatten it with a spatula or the back of a spoon to any shape you like. Fry every 3-4 over medium heat for about 4-5 minutes, until their bottom has formed a golden-brown crust. Carefully flip the arouk to the other side, and fry them until golden-brown on both sides. Keep them on a plate that is lined up with a paper towel to absorb any oil.
    -Enjoy them as is or with bread along with tomato and cucumber slices, fresh herbs and torshi.

      I am sorry. But it shouldn’t happened because the flour and potatoes acts like gluten! May be you need to add more flour to the batter!

      @@Tasty-Dishes I basically made mash potatoes something.. LOL! I followed the right ingredients. I think what I needed to do was to drain the cauliflower. What are you thoughts

      @@8desertnight my recipe call for fresh boiled but not mushy cauliflower but if you used frozen cauliflower you should have boiled it a little too so it is not frozen ! I think I mentioned that in my previous comment that cauliflower should be cooked!!

      @@Tasty-Dishes I used fresh cauliflower. I decided not to use frozen to avoid any mistakes. I'm just puzzled why it would hold together. Hmm.
