    There seems to be good wind for us to make our trip to St. Martin from Ile Fourchue, but rain clouds are all around, so we might get a little wet. Once underway, we anticipated dodging rain clouds but we didn’t expect the need to avoid racing yachts. We thought we were going to have more than enough wind to keep a fast pace, but the surrounding squalls sucked away all our wind. About half way through our sail the sky cleared and the sun came out of its hiding place. The nice weather brought strong winds and even stronger gusts. We did a couple of sail changes. Then we caught a FISH! Our dry spell had finally ended.
    We were excited to get anchored and cook up something tasty. Before we threw our anchor we noticed a huge swell that was rolling through the anchorage. I set up a swell bridal in hopes to ride the wave from bow to stern instead of beam to beam, while Brandy found a nice parmesan crusted fish recipe for the nice Cero mackerel we just caught. It was delicious!

    Pro tip. When you are done with the spices close the lid or cap. My wife is bad about that as well. The spices will still clump but the less humidity it can absorb the better so it will take longer to clump. You can also pop of the shaker top and then use a length of rod to smash the clumped garlic or onion powder back to powder. Great video and congrats on the bounty of fish! Thanks for sharing.

      Thanks David! I think its because they are twist on lids and bigger bottles. We've tried to break them up, but they are hard as a rock now! lol. we have to use them like bouillon cubes 😂.

    I've watched most of your later videos .. today I started at the beginning, it'll take a while to catch back up but enjoying watching your boat transformation. ... I'm taking longer than 2 years; I'm into year 2 on my rebuild. Interesting to watch your techniques. I only watch a handful of youtube cruisers; your one of my favorite.

    Awesome job on filming... for you garlic powder and onion powder issues find you a black pepper grinder and switch out the container.

    fish cooks till you can flake it with a fork, your headstay is a little loose so when you go upwind you might want to tighten it up (or since most Mighty Pearsons have telephone poles for masts, your backstay tightened with tighten your headstay. Rules of the Road - just remember they other guy may be counting on you to know them and act like you know them. Have Fun and thanks for letting is un-isolate! ps - I subscribed!

    Hey guys, glad you're fishy dry spell is over!! Now I'm no expert, but I've had the garlic powder clump up before from humidity many times too. I just end up "re-powdering" it with a butter knife or spoon using the handle end down in the spice bottle, but maybe try dumping the powder in a freezer baggie or 2 if those are available. Also maybe those little moisture thingys that come in the bottom of some foods, like jerky.. What is it called..? You know what I mean.. Those thingys! Anyway, if it's in a baggie, you can pinch it onto your food like the fancy chefs do! Hey?! I know!! And if it still clumps up, Beau can beat it into submission in the baggie easy enough with no mess. That's my 2 cents on that.
    Now, the sunsets & sunrises down there are stunning on some of your vids, & they always leave me wanting more.. Then my mind starts to wander about what it must be like, & I start wondering about the nights.. Do you guys hang out on deck after dark much? What's it like? Is it cooler & more comfortable, or does the wind kick up too much? Is it still? What about the stars at night? I bet there's tons there with little nearby urban light pollution.. Are there? Do you even get into that crap? Or do you go down with the sun? And last, have you ever tried night fishing right there at anchorage using the pieces of the fish you don't eat? Or would that not work with ocean fishing & you'd hook into something you'd rather not, like a shark? Ok, enough questions, but there's some good ones for you to answer on your next vid if you run out of ideas!! 😁
    There's just something about watching you guys doing your thing out there. I think it's that you're both so down to earth & likeable, doing something adventurous, & it looks like fun with a comfortable pace of daily life compared to the daily repeating rat race on land. We (I anyways) can briefly live vicariously through your adventures...
    P.S. Beau is thee man! 😎👍. Ever make it to Upstate NY, I'll take ya fishing on Lake Champlain..
    Oh, sorry, Brandy, you're awesome too.. (for a girl) 😂😂

      meanwhile as beau pummels our garlic... lol. We have a ritual to have a hot tea and watch the sunset. we tend to chat until it gets dark. THE STARS ARE OUT OF THIS WORLD! You will find Brandy on deck at 2 in the morning, staring up at the sky. Definitely taking these ideas down, we will be showing some more of this coming up! Thanks for watching. OH and by the way we were in Albany for 3 years prior to getting Saoirse! Maybe we will see ya up there one day!

      @@BeauAndBrandy Oh wow, so you were less than an hour from here, & look where you are now!! So cool! I just finished watching your last vid. On one hand I hate seeing your freedom to move about & explore hampered, but on the other hand it's (maybe?) a good place to be stuck(?) & glad to see you're both keeping your humor intact & not stressing too bad! Then on yet another hand it sucks to know that a nearby island closed it's grocery stores without advanced warning... Strikes me as them being just a tad out of touch with the citizens. Anyway, hope your supply lines stay wide open to you & all your cohort sailor/adventurers. I know you're both very capable & together you're invincible, but when you're thinking of what you should do, would it be insanity to head towards home?? I know for a fact there's more than just my light left on for yas.. And although many places are very very closed & stay home-ish, I know some places like Georgia are being a bit more trusting of individual peoples ability to protect themselves from germ contamination & opening back up, so maybe some safe little harbor has a nice anchorage that would let you in before hurricane season hits? It's an idea, maybe not the best, but it's an idea nonetheless..😝
      Speaking of ideas, this might seem fun for viewers & you guys; How about you teach us land-lubbars some of that sailor jargon?? Like Portside, Salon, Tack, Jib, Aft, Knots vs. knots, & all that. Like we had a great sail, with "smooth lines" the whole way.. What is the smooth lines?. Stuff like that.. Again, just an idea weather or not it's a good one, I make no claims..

    Great video, mackerel is also good cooked whole on the bbq and it saves you time to cut and chop fresh garlic and onion.

    Sorry to say, spices like onion powder, celery salt, garlic powder and many more are very susceptible to humidity. I would suggest purchasing them in small containers/packages. It may seem more expensive at the outset, but if these are things you do not use daily smaller packages that reman sealed will stay fresher for the long passages.

      We are doing that at the moment for some of the other spices. But when you can find something here in the islands, you gotta by bulk sometimes 😬.

    Cero was a favourite of mine. Never caught any much bigger than the one you took. Just loved it fried in butter and vegetable oil. It never needed anything else just veg to accompany it on the plate. Bon Appetit!

    Try dried Pinto Beans in the garlic and onion powder. Works to keep salt and sugar from clumping up. Couldn't hurt to try that. Thanks for another great video.

    This is a good thing to keep moisture from your food.
    I also suggest using glass jars and not plastic jars

    Hi Beau& Brandy. My garlic powder used to solidify all the time. Now if the container has a tinfoil seal be sure not to throw it away. Reuse it and seal it well to make sure no air gets in there.From " hungry bachelor" lol

      Dear hungry bachelor. 😂 we have some bottles like that but for our onion and garlic are twist on tops, so we think that may be a contributor of humidity gathering. but we could try to add some foil. Thanks for watchin'

    Hi good to see you sailing and you don't need me to tell you what to do ....but.....one trick you might try instead of pinching up to depower in the gusts is to drop the traveler while the mainsail is still in tight. Your traveller is not very long so may not work that well , but better than letting the mainsail out and getting baggy and increasing heal. On my little racing keel boat I have it set up to quickly drop the traveller as the gust hits and then I pull the car back up to center or windward as the worst of the gust has past. I do this to maintain speed , course and keep the boat moving to avoid slowing down where heel increases with out forward motion.....or maybe that's just bull cr*p.... love the smiles, your have more fun that us! cheers Warren

    OMG again a super episode! can't help it but just love you guys! and don't forget Oona !!!!!!!!!!! we all have to get out of this lockdown! Brandy did I understand it right you have rice corns in the garlic mix ? normally it should keep it dry? if yes you have no other option than keep it in plastic container and smash it couple of times to loose it up. looked yummy ! boat food isn't always like 5 star restaurant but as long your tummy and appetite are satisfied all is good! stay save and like always, just can't help it I have a big hart for dogs, UUUGE hug for Oona! lot's of love ! ⛵️☀️🌴🙏🐕💕🥰

We have tried putting rice in the shakers, but the problem they are too small and can slip through the holes and the next thing you know you have crunchy eggs or soup. lol. they are so clumped up now we are using them like bouillon cubes.     Add navy beans. Just a few. If nothing else it will help break up any clumps. But seriously it does help with the moisture

    One suggestion when cooking fish: Cooking times can vary widely based on what you're cooking it on/in. Get yourselves a digital meat thermometer and probe into the fish to determine when it has reached the correct "cooked" temperature. Perfectly "done" fish every time.     I roast whole heads of garlic by cutting the top off wrapping it whole in foil and drizzling in a little olive oil. Same with small onions. I put them on the bbq for an hour or so with low heat, when done I squeeze it all into a small jar and cover with more olive oil. Keeps quite a while and the garlic or onion oil is as good as the garlic in it. Only thing I've found to work in warm humid places.

      Every lure in the book lol. But mainly cedar plug, squid skirts, tuna darts, and divers. Ballyhoo live bait has been good for us too. On a wire leader, with a 150 lb braided line. (which is prob overkill, but we've had too many big guys snap our line previously. We pretty much have a line in the water whenever we are sailing (except at night) and troll about 300 ft behind the boat. We like to troll drop offs mainly. Hope that helps.     Small, aluminum (or stainless steel), clamp-down, containers should keep your onion and garlic powder pretty good, as long as the rubber seal is good and the clamp is very tight.

    Clumping spices! This blog says to put dry beans in with the spices and never shake the spices over steaming pots/pans as that adds to the moisture in the container! theboatgalley.com/stop-spices-from-clumping/

      Another option is... Soda crackers absorbs moisture very quickly, they will not un-clump, but they absorb better than rice or beans, put them in a small fine mesh cloth bag, . Check them often if they’re soft replace them.

Cauliflower is my least favorite food. Even adding a little to a dish ruins it for me. You can have my share of the world cauliflower crop.

    Nice video great catch great cooking video when ever trolling try and troll along the drop offs see if you can get a daisy chain for tuna put rod high in holder and put back 200 ft and diving bait Bonita color and mahi-mahi rainbow color and surface bait like islander blue purple pink and white keep them closer to. Go under the line of daisy chain.     Love the sailing action great video.I did not see you killing your fish, maybe you want to protect the viewers.
    2 reasons to do so though: *1every creature hope for a quick death even at the end of a club. *2 fish taste better.
    Tip;Best way to cook mackerel is to boil it in a mix of sea water and inexpensive white wine with a "bouquet garni"( fancy word for thyme, rosemary,laurel or similars) if no whine use fresh water an a nini sprinkle of sugar + nini splash vinegar.BTW (any) fish is ready when flesh and bones separate easily.
    Serve the makerel with boiled potatoes and butter (+FRESH pasley) and you just saved yourself $50 in a Paris restaurant.
