- Today I am sharing this delicious recipe for a fresh garden vegetable cheese spread. Chock full of fresh veggies and herbs and cream cheese and goat cheese. This is perfect for sharing as an appetizer with a glass of wine. Spread this on a prime rib burger, a grilled chicken sandwich or in a tortilla stuffed with turkey and fresh vegetables. The possibilities are endless!
I started my spread with a combination of softened cream cheese and goat cheese. If you prefer not to use the goat cheese then you can absolutely sub out an extra brick of cream cheese here. I was able to get my hands on a delicious log of organic Chevre' and so went with that. Then I chose the veggies I wanted in mine. I chose shredded carrot, red bell pepper, green onion, chives along with fresh parsley and dill and some dried seasonings such as salt, pepper, flaked onion and garlic.
The preparation is simple. Put everything in a bowl and beat it together. This is why it is super important for your cheeses to be at room temperature and soft to the touch so that they incorporate well with the vegetables and herbs. Blend until you are satisfied with the mixture and then place in an airtight container and refrigerate for at least an hour before serving to allow the flavors to mingle.
You can serve this as a spread for crackers or like I did with some sliced apples or place in a sandwich. This would be great for finger sandwiches for an afternoon tea or luncheon. This is also great to stuff celery. Your imagination is your only limit! Spread this on a toasted bagel or toasted whole grain bread top with sprouts and boom, instant breakfast! I love to spread this on a tortilla along with some turkey or chicken and a mess of fresh vegetables to make an excellent wrap sandwich that can also be served as pinwheel appetizers if you cut them further!

My daughter came to visit with her 2 children. She told me the boys hate veggies and won’t eat the dip. I smiled said that’s okay they don’t have to eat it. Before I could put it on the table they were asking what it was lol I smiled telling them I made a treat and hoped they would like it. Hi, I just wanted to say I made this vegetable cream cheese spread last week and it's so good! I just wanted to let you know I added about a tablespoon of Worcestershire sauce and a teaspoon of brown sugar. And I used fresh dill and chives that I have growing in pots in my back yard. Fresh dill taste so much better than the dried store bought stuff.

I use Knorr's veggie soup mix for this. This looks delicious
I have used that for other dips in the past but trust me when I tell you that the fresh veggies are way better!
Oh I 'm sure they are :) I use the knorr brand when I'm in a hurry.
Khorr is loaded with sodium and Lipton onion soup mix too..
I do use Lipton onion soup in some things. You have to add the right amount of water.

I got it with a super cheap Sunbeam stand mixer 15 years ago. Mixer lasted six months bowl lasted much longer. I also love that bowl.

Yes but I think it would be too rich. The cream cheese mellows the harshness of the goat cheese. In my opinion.

Our kitchen is very small and we do not have the Space to shoot as if this were a television studio kitchen. Additionally we choose not to show our personal kitchen Because in the past we have been subjected to some very hateful dialogue about the condition of our kitchen. So this is how we choose to do things. I also do not show myself when I cook because I am not the focus of the video. The recipe is the focus of the video. I also do not care to subject myself to harsh and ugly comments about my personal Appearance. Life is already hard enough I don’t need to hear what everyone thinks about how I look.
Looks so good but what else can you use insted of goat cheese because really dont like goat cheese, thought can you use a natural cream cheese, dont know if you know the natural cream cheese called philadelfia
Philadelphia brand spreadable cream cheese has a delicious smoked salmon spread. Sadly, it has gone up nearly a dollar a tub recently. Would you have an affordable do it yourself recipe?

Were you using the dried parsley just for color? Because dried parsley doesn't have much taste.
I did not use dried parsley. I used fresh. I used dried onion and garlic flakes. When dried parsley is fresh it has plenty of flavor but I did not use that here
Mix it with canned salmon for sandwiches.
That is not something I would do. Not a fan of canned salmon. But you go for it!

No. Sour cream is not a good substitute here. I mentioned in the video that if you did not want to use goat cheese, you could simply use two bricks of cream cheese. Hope that helps!
Can this be frozen?
No, you cannot freeze cream cheese. It will break upon thawing.
