What kind of adapter would I need to use regular banana plug speaker cables with this amp?
No adaptor needed. You just need to find some 2-pin din connectors for the amp side and then normal banana plugs for the speaker side.
Do you have a particular favorite sounding loudspeaker?
So far the best I've heard are Harbeths and also Linn Kans
