In Africa most people eat jollof rice on Sundays and at parties. You usually blend the tomatoes, paste, pepper, onions, then fry, then put seasoning, then throw in the rice(after washing off the starch) also minus ketchup and sugar 😀. Love your channel

Actually, maggie and knor cubes have sugar in them so the additional sugar is not wrong...same thing with ketchup its just additional sugar, vinegar, and tomato.... jollof at the basic level, needs tomato paste, pepper, onions and regular tomato...everything else is extra and open for customization
too many people don't put enough care and happiness in their own food. ya, when guests are over they do but not themselves. good to see you be mindful in the preparation of your own meals

I like the caramelized taste because I did added sugar and ketchup, Which I know was not traditionally but I need something sweet to swap out the red pepper I did not have and I just used whatever I had laying around the house. All in all. I would say the flavor was there. Please do give this recipe a try and I would like to hear the feedback on it.

KCYB22 it's better if you use a spoon or your hands because you can fit more on there therefore you taste the flavors better... regular rice is plain and doesn't really make a difference how u eat it.

Jellof rice originates from the wollof tribe in Gambia but spread across west African countries and is now popular in Ghana and Nigeria... it's not traditionally guyanese/Caribbean however there is a 'Creole rice' in st Vincent which I had which was basically jellof rice and kidney peas... I love jellof rice and have been trying to perfect my recipe so it tastes like the aunty's from church who would make massive pots of jellof at functions and parties... I love the fact that you are not shy of cooking African and Caribbean food! You need to do a food travel channel around the Caribbean and Africa you would love Tanzanian food check out Mark WIens in Tanzania and the beef pilua and fried fish... try and recreate that !
