I also have a deep sink more than 20 years.
I am using chinese wok for most of my chinese cooking. Will need a bigger space so we ordered no regrets, makes washing easier.
My hubby will use this big sink to wash parts from our fans.
Monthly wash.
My current sink is as big as a baby bath tub😆.

I was surprised that you chose one sink instead of a double…how do you hand wash now…I know you had been putting washed dishes on one side and dish water on the other. I’m so happy for you!! I know! It's is just gorgeous?! It's actually easier to wash dishes now haha! I just put some soap on my rag and wash each one and rinse as I go. It's pretty easy! Hope you are having a great week!
