We started eating after partition? Best food now and then was Mughali dishes. Bengali cuisine,
Gujarati cuisine, South Indian food (Madrasi was best), Hydrabadi spicy food was best known. In west Shindi food and Balochi cuisine are distinct. Peshawar and rest of KPK have best BBQ in the world. Present day Bahrat was and is mostly veg(sagh pat and dalian) basiv food. As far ad as army is concerned it was British Indian army with mostly Marshal races in it. Before British there was Mughal armies and Rajas called jowans when needed. Sikhs had reasonable force.
