- This video is about making Bamboo shoot pickle with king chillies or ghost chilliies you will see the detailed recipes which is very easy to make achar. It's is a spicy pickle made using raw bambooshoot or boiled bamboo I prefer to use the boiled one in this video but it's up to you also sun-drying it will give a longer shelf life to a pickle. It's is bambooshoot season now so you can pickle them like this and store them for off seasons or you can earn money by selling it .
Ingredients used :
1.fenugreek
2.mustard seeds
3.cumin
4.kalonji
5.Ajwain
6.fennel
7.salt
8.turmeric
9.chilli powder for color (it's optional)

The best way is to keep the bamboo shoot for months in a tight container until the bamboo shoot becomes sour in taste n it is ready to make pickles

How long do you keep the bamboo shoots in the sun after boiling, and long do you have to boil it ??
boil for like 30-40 mins till it's cooked and after boiling sundry it for a day

If want it sour then you should use the fermented one but it will become too sour so make sure you boil or washed it to balance the sourness i hope you find this helpful

Do you clean with water and boil the fermented shoots ?
To pickle the fermented one I've made video on it too you can check it out I squeeze out the juice and pickle them or if i don't want it to be sour I boil and sun dry them then I pickle them

2,3 days depending on the wheather pickles taste better after a week to me

How long do we have to kip it for the bamboo shoot to taste tangy
may be a week or so to get slightly tangy but if you want it more sour you can prepare it with fermented one.. I was actually thinking I'll make a video on it so stay tuned if you are interested

What type of smell this pickle have, I purchased it once from an online store but it has a very intolerant smell
The smell could be little pungent Because of king chilli but nothing intolerable.. infact the smell itself to me is mouth watering

Depending on the amount of oil you use for like 2,3months that's the longest I've stored
The masala is called paanch poran.. You can get it for 30-40 bugs for 50gram or more i think...
