Yep ,same here. Helps to explain why soaking wood helps sometimes.
It makes sense when using large chunks and letting them soak overnight,
but totally useless when soaked for an hour or less and with small chips and such.
I’ve done wood grilling since beginning. Cherry has always been among my favorite.
I love cherry wood for beef, even though it doesn’t seem to be that popular. Cherry wood smoked burgers are heavenly!!
I use cherry a lot on pork and chicken! Love it! 😀

In Central Florida we used dead orange tree woods for something different - bed of coals and then a dry log for smoke. But all those old dead (large trees) are gone. THANKS for your great video and education - which is outstanding as usual - and long enough. MORE!

I enjoyed this video. I mainly cook meats via sous vide, but have integrated a pellet smoking tube on my propane grill to up the flavor. Cold smoking before tossing things like pulled pork into the bag is amazing. Then, once done with the initial cook, hot smoking to finish it off.... so good!
The pellet tubes are fantastic for starting out and makes me want to get into smoking more! If you're on a limited budget, I highly recommend giving it a shot. Smoking isn't exactly the cheapest thing to get into, especially if you've already shelled out the cash for a quality propane grill. Looking forward to one day getting a proper smoker though!
I have many friends that use smoking tubes and they do a great job... I think I should test and see how good they are! Thanks for the info! 😀

I'm on a Ninja Salty Tales catch up binge tonight. This is a great topic! I've become a fan of Alder and Pecan lately.
Both are on the milder side especially the Alder and work nice for longer smoking where you want the flavor nice and deep but not overpowering.
I like the stronger flavored woods like hickory for quicker smoking where you want a lot of smoke flavor in a shorter time.
Mesquite has a really strong flavor and works great for quick meals like dogs and burgers, at least for me.
I usually just use briquettes when we grill but this here is Good info for when we go camping this Summer. Thanks for sharing Ninja.

I read that fruit and nut trees work best but stay far far away from evergreens like pine,
unless you like the flavor of tar!

Awesome video! My go-to woods are (in order of use) beechwood, acacia, apple, cherry and to substitute the misquite wood, I use walnut shells and that seems to work for me.

@@SaltyTales I can’t get misquite wood here, so the walnut shells are a good substitute. The Acacia is a really good substitute for hickory, can’t get hickory here so I had to find a workaround.

guava wood give a very unique nice flavor to meat! We dont have those here in FL but I used it a lot in Cuba! 😀😀

Hickory and Pecan is my favorite pair for beef. Its a good combination. Pork hickory and cherry, Chicken Mesquite and apple.

Great video ninja! Im about to smoke a 14-15 pound brisket in my "22 weber kettle. How many wood chunks would you recommend? This will be the second brisket ive ever smoked, the first using charcoal/wood. Practicing cause i picked up a 11 pund a5 wagyu brisket point so i wanna master regular before i cook that.
Oh man! That is a big boy! That cook will take you at least.. min 12 hours so I will add about 4 blocks of wood and have 6 or 7 more in water to add mid cook... You are in for an AWESOME treat there!! I WANNA TRY IT TOO!!! 😀😀😀

you should give almond wood a try, very good for beef. We have a lot of it here in Bakersfield, CA. I mostly use it for tritip

@@SaltyTales it's close to hickory, maybe a little milder, but very distinctive. I like it best with beef or fish.

Something I need to mention. It's a more sappy wood. I live in the rockies and cooking with pine or aspen is different from how you would generally smoke. You don't ad it to your coals, you cook with it. Campfire rules come into play. You build a bed of coals and don't add wood while you're cooking. If you need more heat, add a hardwood charcoal. The sap needs to be burned off or it will ruin your food with soot. But when done right, It's better than any smoker!
You need to make a video about very exotic or unusual kinds of wood and compare with the most common american woods :D

"Never" is a pretty strong word to use, especially when talking about a broad topic such as smoking and wood. Pellets? Sure, don't see many people advocating for soaking those. Chips or chunks? Depends on the situation. Honestly, you sound like you're trolling.

Soaking wood chips only delays the production of smoke. All of the energy is being used to evaporate the moisture. Once the moisture is gone, then the smoke appears.
@@kevinliddell5793 I'm not sure I'm following you here... If smoking, the wood, should be distributed within the charcoal pile as I demonstrated in the video. If you look closely to that scene, I'm adding wood to the fire and also on areas with no fire, as the charcoal light up, the wood will release the smoke. About soaking the wood in water that "never" sentence is very heavy. As you said moist will evaporate out of the soaked wood but that will no change the cook in any way or form... otherwise no one will put water in their smoker.
