My grandma used to bread and flash fry cube steak then cook it in the oven for a hour or so with mushroom gravy was the best. Wish she was still around to make it 🥺.....I think we have all tried to make stuff like grandma and its not the same.
My all time favorite is a Chuck steak done on a grill. I prefer beef taste rather than tenderness although I’ve never had any complaint about my Chuck steaks. I tend to kosher salt my steaks, wait 20 to 30 minutes, rinse, dry thoroughly and cook. Yum!
I've never actually eaten an eye round steak but my mother in law used to get them served to her when she came for a visit, sometimes I'd bacon wrap them for her.

It sounds like a lot of the beef cuts from the bottom part of the list would work well in stews (in a slow cooker, pressure cooker or Dutch oven), braised with a lot of other ingredients to lend extra flavor & a nice variety of textures.
Eye of round is best kept as a roast, slow roasted and thinly sliced for sandwiches.
I often will purchase an inexpensive cut of beef (like flank steak or skirt steak) on "manager's special" at the supermarket, and cut it up into stew beef myself. I find that I can get more evenly-sized pieces of stew beef that way than with buying the pre-cut stew beef in the supermarket meat department.

Eye round can become succulent, it simply takes marinade and patience. A 72 hour soak in the fridge, and you have it.

When cooking eye of round for roast beef, you really want to season it well.
I made a new kind of cheap steaks.. You see all kinds of beef thin slice, and beef shaving Right? It really cheap RIGHT? Don't pass them up! I will tell how to make a thick delicious steaks out of them! 🥩🥩 It so simple. You wish you would thought of it? Ok get them home ! Open them up take each slice and lightly season each slice. and STACK THEM. To the same shape. Once there all season, and stacked. Put butter or any kind of cooking oil ect. YOU WANT OVER IT. Take your hand and flatten it out really good. Put in the Refrg. Over night, take them out press them one more time, and there ready to be smoked grilled. I like to smoke them 30 min. Then flame broil it. Just take your tongs, and flip it around just like a big thick steak. Bring it in when its to your likings. LET IT REST 30 min or more Now cut and taste it OMG IT SO TENDER, JUICY, AND OUT STANDING 👍👍 You didn't pay a arm and a leg for it
So many restaurant steaks are now cut with some heinous tough-gristle-connective-tissue in the middle. Ruinous. I miss a decently cut steak that’s fully edible.

My butcher retired.. He had a cut he called "charcoal" cut... It was awesome, delicious and inexpensive... Now I (of course) can not find any butcher that has even heard of it... Or if maybe they did they was not interested in helping me... 🤔

I cook eye round all the time and sorry your wrong. I slow cook it with lots of onions. My father was a chef, and you obviously don't have real chef's write your food stories.

for me personally, there's LITERALLY NO SUCH THING AS AN *INFERIOR* CUT OF BEEF. ALL PARTS ARE TASTY, EVEN THE LITERAL ASS X'D
SURE, I HAVE MY FAVORITE PART WHICH THE OXTAIL, BUT THERE'S LITERALLY NO PART OF BEEF THAT I GENUINELY DISLIKE.
