Fresh corn season is here! Here's to another cooking session with my grandma teaching me how she makes her version of Ncuav pob kws: Fresh corn cake. Ncuav means cake, pob kws means corn. Since fresh corn is in season I wanted to see how she makes her ncuav pob kws and it was simply simple! :) It's basically just fresh grated corn mixed with glutinous rice flour and cooked in banana leaves. Yes, that's it! :) I love learning as much as I can from Grandma and sharing the knowledge with you all as well. I'll be showing you two versions of corn cakes today: Grandma's version and my version. Grandma's version is super simple, fast, and very nostalgic. She doesn't use any sugar in hers since she doesn't like her ncuav to be super sweet. She says that if the corn is sweet enough, that'll be good enough for her. For my version, I'll be adding sugar and coconut milk for those interested in those flavors. So if you are making ncuav pob kws for someone who doesn't like sweets as much, try out Grandma's version. If you're on the sweeter side, then try out my recipe. Both are equally good. Oh the memories.

INGREDIENTS:
--GRANDMA'S VERSION-- [makes 20+]
15 corn (grated)
2 ½ bag glutinous rice flour (2 lbs 8oz)
1 (16oz) bag rice starch
Sugar is optional
Banana leaves
--CINDY'S VERSION-- [makes 12-15]
3 lbs corn (6-7 corn)
1 lb 8oz glutinous rice flour (705g)
½ cup coconut flour (65g)
½ cup rice flour (56g)
½ tsp salt (4g)
⅔ cup sugar (148g)
1/2 cup coconut cream (125ml or 113g)
Banana leaves
Butter

❤ Grandma! I truly liked all the versions and a the hardwork put into them! When my Grandma made them my sisters and I did the hard part in grating them while my Grandma cooked them. She also didn't add sugar, but it was because she was diabetic. So most times she added syrup on the side for us as dipping sauce lol. If you don’t have banana leaves you can always use aluminum-foil too, but when you bake it take it out of the wrapping foil.
When is freshly made use aluminum foil to wrap it, let it refrigerated till it’s a bit stiff than take it out and bake it on a flat rack, like a pizza rack or use a pancake frying pan or I usually use the Presto Electric Griddle. When it is cook and crisp to your like than wrap it up with the clear Saran food wrap. 😁

8b zone. Make sure to cover the roots really well during winter time and then open it back up during spring time.

How you do with your banana trees before winter ? Thanks you so much ❤️
Cover the roots well over the winter so it doesn't freeze and die. Wrap it with tarp and tie it really well to protect it until it is ready to be harvest again in the hotter months.

Use the frozen one only or fresh one. Di not used canned one

I don't recommend canned corn. I would suggest using frozen corn instead.

would it Taste different if u stream and then fried?
No. The texture will be different but it'll taste the same. Personally, I think steaming it first makes it more sticky since your introducing more moisture to it. But there's no wrong way about it :)
Like grandma make more because she not use alot of fat powder to mix.
