Thick Cut Pork Chops on the Weber Kettle with the Slow ’N Sear.

  • Perfectly cooked huge pork chops! Indirect with a final sear.
    • Started with two, 2 1/2” thick pork chops from our local butcher, they were about 1 ½ pounds each.
    • Seasoned them with Killer Hogs AP Rub.
    • Set up the Weber Kettle with the Slow ‘N Sear and started the cook when the temp was about 300 degrees, and let it rise toward 400 degrees until they were ready to sear.
    • Once they got close to 90 degrees, I flipped them to promote even cooking.
    • Cooked them indirect for about 1 hour until they reached about 140 degrees.
    • Seared all of them until I like the color of them and pulled them off.
    Summary: The Slow ‘N Sear does a great job on cooking nice thick cuts of meat. These pork chops turned out great!

    Sams club hooked me up with a double cut on their chop....
    Stone mustard red wine soy sauce. W sauce marinade....
    Grill is coming up to temp now.

    I sear the chops first semi lightly then using my thermometer I check temps after the first 15 minutes once the chops hit 130 put in foil pan then bring them to 140 cover pan for 30 minutes while resting in ah cooler depending on your seasoning skills ya meat should be good to eat

    Those looked awesome, how do you know how much charcoal to use? Especially if you just want to cook up a couple steaks or pork chops?

      Thanks! These did turn out nice! Tough question, I usually have more charcoal than I need and in most cases, I shake off the ash from a previous cook and use up my leftover charcoal. For steaks, I like to have my Slow ‘N Sear filled pretty good so when I sear I have a good hot fire. A full chimney of coals fills the Slow ‘N Sear. For me, pork chops I don’t need as much because I don’t what a hard sear on my pork, I like to just give it some color. So half to 3/4 full works well! Hope that helps? Just a side note, some say your fire does not get as hot using leftover coals, I can usually make it work for what I am doing! Cheers!

      Thanks for watching! If you look at the more information on this video, I have the complete outline of the cook. If you are asking what temp the grill was running, we started the cook around 300F and by the time it was finished it was running around 400F. I normally cook pork to 145F because I like them to finish around 150F. Hope that helps.
