- Swedish Meatballs (Köttbullar) are a global favorite - thanks, IKEA. This is my meatball recipe, but it's special. In Sweden, a theory claims these meatballs are related to Turkish Köfte. I am not sure if that's true, but what if it was?

🍲 Swedish Meatbowl Recipe
300g frozen cherries
300ml tonic water
100g sugar
pinch of salt
1tsp corn starch, mixedwith 1tsp of water
1 cucumber
2 Tbsp vinegar
1 Tbsp sugar
1/2 tsp salt
small bunch of dill
1 Tbsp (clarified) butter
1/2 onion, finely diced
250g minced meat (pork & beef)
1/2t salt
1 tsp garlic powder
1/4 tsp allspice
1/4 tsp cinnamon
1/8 tsp nutmeg
1 Tbsp (clarified) butter
1/2 Tbsp flour
1 Tbsp mustard
150g milk
100g cream
salt, pepper to taste - Jak na to + styl
Its mind-blowing to me that lingonberry jam is that hard to get a hold of in Germany when it's readily available in both Denmark and Poland
It actually is not, almost every supermarket that is not a disounter carries it. I buy it all the time, because I love it along so many foods.
At this time of year around Berlin, he could have just gone outside and picked them in the forest...
The jam is quite easy to find. Even Aldi usually carries it. However I have never seen fresh lingonberries.
I wouldn't be surprised if you could find frozen lingonberries. However, substituting with cherries must give you a completely different taste profile! Lingon is very tart, and when you serve them raw, with sugar stirred in they give even more of that fresh zingy taste. Not in an overly sweet jam.
Allthough... I suppose cherries is more in line with the german taste perhaps. 😂

He could absolutely have used lingonberry jam off the shelf.
But making it yourself is nigh-impossible for want of fresh berries.
And when substantial parts of your viewerbase have to be assumed not to live in northern Europe, this probably helps them way more than "just go pick up a jar, lol".
As a swede, I like this take. And while the lingonberry replacement won't even be close to actually lingoberry jam (sorry, good try), it'll probably taste really good still. But I think what's really the signature of the Swedish meatball is actually its texture. Most swedes don't even know themselves since they just buy store bought, but the key is to stir or whisk the ground meat until it becomes a thick mixture. I think frying that up instead of ground meat could've made it more "traditional", although at this point I'm not even sure there's a point in that XD
And while some people criticise the use of instant mash, it makes total sense if the idea is to mimic a turkish humus plate, since you'd want the smoothness.
How do you tell those cherries will not be close to lingonberries?
Lingonberry flavor is very distinct, and very much its own thing, nothing else really comes close. I personally _loathe_ it, so any comparable but different thing is a win in my book. @@SeeNyuOG
@@SeeNyuOG Well, it is subjective and using cherries will serve the same purpose of adding some sweetness, tang and fruitiness, and maybe some bitterness as well depending on cherry type. But the taste is very different. Like, making a raspberry pie, you wouldn't switch it for blueberries if you really wanted the raspberry taste, but if it's just to have some kind of berry niceness in a pie, both fullfil that.

all of these "swedish meatballs" videos on youtube lately are using the weirdest ingredients in lieu of lingonberry jam. Yea sure you cant get the real one with chunky lingonberries, but using a completely different berry is not even close. Cranberries are way different as well. If the criteria is round and red, you might as well be using tomatos.

@@PartikleVT I suppose the idea isn't to replace them by something that tastes similar to the original but to find something that fits the dish equally well or closely enough, even if it tastes different. Cherries, black currants or plums go very well with dark meat/beef for instance.
Another great use I've found for dried potatoes: thickening soups and stews. If you are making a creamy potato soup but don't want to overcook your potato chunks, add the potato flakes a bit at a time until you reach your desired consistency.
After this I think *you'll* need to be assembled by hand

Jag har svårt för pulvermos men annars tycker jag det där ser riktigt gott ut.
The besy lingonberry jam isnt really a jam. Its not cooked. Its just sugar and lingonberrys that has been left in a jar for a couple of days. It wont really go bad even tho its uncooked since lingonberrys are kinda antifungal and antibacterial
Fantastic idea (i´m swedish), Though i highly dissaprove of the jam and powdered mash...
As many Swedes have already answered, I could see myself eating this. Of course it won't be the same but I would probably enjoy them just as much. And you should try the raw stirred lingonberries (directly translated) you preferably take some frozen lingonberries and sugar to taste and stir without boiling them, stir and maybe smash a little as they thaw in a bowl.
As a Swede, i find this intriguing. I'm sure it's nice, but it's kinda far away from our meatballs, even if there are as many recipes as there are Swedes. I don't think any Swede would spontaneously think it was inspired by meatballs in a double blindtest. I really love your willingness to experiment and improve on traditional recipes.
That cucumber side pairing made me question if this was just a prank on Swedes, though.

I trick from your local swede... boiled potatoes, meatballs and brown sauce. Use a fork and mash it together. Looks like baby food but is 1000 times better than regular. Köttbullar och Potatis 😊

As a person living in Sweden I can accept the deconstruction, but cherries instead of lingonberries and potato mash from a package - never. Also, just browned minced meat doesn't really taste like real meatballs because you must use some white bread and milk while making meatball mix.
I hate dill and most swedes use parsley for the pickled cucumber. The cucumber is better the day after you make it. You can eat it for a about a week ❤
I like the way you dump the meat into the pan, then pull the paper off. It’s exactly how I do it, so satisfying 😅

This is where I forget that lingonberries doesn't grow in abundance everywhere in the world as they do here.
Theyre pretty common in Germany; and even here in the UK you can get frozen lingonberries pretty readily. Guessing this was for the american viewers.
(Using powdered mash however is heresy).
@@GCOSBenbow even in northern America they grow in the wild though. Called other names, but the same berry. It grows in abundance in Scandinavian climate, that is very similar to Canada, as one example.
I think he just hasn't tried hard enough to find lingon. And he doesn't care. I'm wondering if he has even tried them? If he had, he would know cherries taste is far from lingonberries (preiselbeeren in German).
After just a quick Google search in German, he could have easily ordered frozen lingonberries online, to actually give it a try, making jam, or just stirring them raw with sugar and letting it sit for a day. You can even do that with frozen lingon, without thawing them first. Just stirring them once in a while.
I need to ask, is it intentional that you made cherry jam instead of lingonberry jam? I mean, cherries, no matter the way they are prepared, taste so different compared to lingonberries.

If you didn't try to shoehorn in the word Swedish, this would be fine. But not a single element other than the cucumber slightly resembled the Swedish dish.

This is a great idea. I think all those spices are for the _winter/Christmas_ type Swedish meatballs. Maybe just _nutmeg_ for normal ones.
Try making it with stock instead of water, trust me.

I believe the difference is mostly due to the variety of potato used. If you're making dried potatoes then you obviously want some variety that dries easily (running a freeze drier isn't cheap.) And that might not be the best tasting variety. So I'd say there's a lot of variance by brand.

If you don't have a mandolin handy, use a nordic cheese level instead, works fine.
Thanks. I've been toying with the idea of lingonberry jam made from cranberries for my American friends, but haven't come up with an idea for something that gives the right bitterness. Never thought in the direction of tonic water.

senap i gräddsåsen är fan toppen, kanske inte lika mycket som här men en liten klick är lätt värt att testa :) pulvermos gör det hela till mer av en gatukökskänsla, vanligt mos är klart bättre men inte oätbart iaf. körsbär dock, helt klart skeptisk till det haha@@theo7049

Instead of using corn starch use potato strach for a more authentic flavour. I was taught me to use it in bakery and jams but not in cooking if it makes sense?

Packet potato is a big thing here so ok? but it seems usually eaten with hotdog in a flatbread?1?.
The minced meat stuff looks tasty and gravy okaaay.....but the cherries....they are heresy (as evidenced by vats of lingonberry jam available everywhere in Sweden ).
Also 😉 it's crime against good german cherries which would want to be in kirsch or kirschenmichel or a streusel

Kinda Swede here! I love this since making meatballs is such a chore compared to just frying up an onion and mince, and will be trying it out. Unlike most people I think the cherry jam isn't too bad of an idea. The traditional lingonberry jam gives a sweet and tart component to the rich potatoes, meatballs, gravy, and I think you are getting the same effect with cherry jam. I personally have never seen mustard added to the gravy. I don't like mustard so I'd skip it, but if you like it go for it.
Also whenever I eat meatballs here, the addition of the wintery spices (cinnamon, nutmeg, allspice) is actually quite rare, but every non-swedish recipe I see includes it. I don't really know why, I thought maybe Ikea's meatballs include it but not sure. I'm not a fan of this either and prefer a pure meat meatball, but yet again do what you think is tastiest :)

I love lindenberry jam, but it isn't that different from cranberry. I prefer lingdonberry, but if you can't get it cranberry works. It's more tart though

- Salad Olivier, raw parsnips and raw chicken with gochujang
If you want to add an additional Russian flavour to REALLY align with russian cuisine add a teaspoon beluga lentils for a bit of luxury.

This is literally just finnish/swedish home cooking. Ground meat sauce and potato mash.
You have certainly captured the essence of swedish meatballs, it's about the condiments, though that "cranberry dip" I just can't approve of. If you can't get lingonberries it's not worth making meatballs.
Brother! you live in germany, sweden is just around the corner. We have lingonberry everywhere. I don't dissaprove of the use of instant mash since having to peel potatoes is a pain however replacing lingonberry? That's complete heresy.
We even have lingonberry jam in most supermarkets in Germany, no idea why it needs to be replaced.

Probably because that gives people in places like America or Asia a way to attempt this more easily.
I don't imagine it to be very easy to locate lingonberries in any country that doesn't traditionally eat them. They're a bit niche as far as food items go and the function of the jam is more as a contrast, anyway. As such, you could feasibly replace them with cherries, cranberries or maybe even mango chutney so long as it has sugar, acidity and a bit of bitterness.
Making food with what you have is great.
But the taste of cherries are so far removed from lingonberries that the comparison leaves a bad taste in my mouth. If it works it works, but it doesn't taste even close to the same.

Sweet you... If you can't be arsed to make proper mach, with lumps (as you should), at least use "potato flakes" and not the granules. Just a tip. Otherwise you're really doing great with the recipe!
I have to say that lingonberries are superior (not the ones you buy in a supermarket: You pick them and make the tart "jam" yourself).

That looks delicious. Swedish people always hate this take but traditional Swedish food is truly atrocious (with some exceptions), like there's no saving how bad most of the traditional food is. Let's just say there's a reason that its cuisine hasn't hit that big outside of Ikea in most countries. All I need to say is that you should google Kams, their banana-peanut-curry-pizza or "3 pensionärer får 50 kr - vem gör godast måltid?" to get an idea of how absolutely vile and deeprooted the grating palate is.
This sounds super negative but I really want to emphasize that it isn't: Swedish food doesn't need to be bad. The ingredients avaialbe in Sweden are bomb, they have tons of wild mushrooms, herbs and venison. There are a lot of modern Swedish restaurants that try to cook seasonally, borrow cooking techniques and ideas from other cultures and then reinvent it with a Swedish take. Ekstedt had this (truly) Swedish taco that used meat from a moose, lingonbased salsa and bread that was used by some kind of really unique barley. It was just bomb. 1889 had this pizza that was also just using moose, Swedish herbs and it was also just bomb. I think as soon as Sweden embraces the idea to let go of all the terrible cooking methods and embraces modernity or other cooking methods like here, there's really so much potential coming from here.
