  • It is our last night in Manila before we move further out into the Philippines to explore. So me and my boy ‪@kayyywild‬ decided why not treat ourselves to a delicious Filipino meal at Barbara's Heritage Restaurant! This was honestly the best meal I had in Manila and the staff we're absolutely amazing.
Some of the best service I have experienced! It's such a shame we missed the show but at least they gave us a small taste of the energy. I would highly recommend coming here, it really was an incredible experience! 😍

This video made me hungry, Josh! Good choice of Barbara’s for traditional heirloom Filipino cuisine. Those three dishes are among my favorites - Beef Caldereta, Bangus, and Lechon Kawali. The difference between Lechon Kawali and the traditional Lechon is that Lechon Kawali is simply pork belly that is deep fried, whereas the traditional Lechon is a whole pig roasted over charcoal. The dessert Brazo de Mercedes is made of merengue with a citrus custard filling. Absolutely delicious! 😋

The fish is called 'bangus' in filipino. They're mostly grown in fishponds in Dagupan, Pangasinan - the bangus capital of the Philippines. If you look at a satellite image of Dagupan, you'll see the abundance of fish ponds in the area especially along Lingayen Gulf.

To begin with, the spoon is utilized to scoop rice and other traditional Filipino dishes. The fork is employed to aid in transferring food onto the spoon. This technique proves beneficial when consuming rice-centered meals and hearty stews, which are frequently encountered in Filipino cuisine. In case, you don't know! The Spanish dessert known as Brazo de Mercedez was brought to the country during colonization. Brazo translates to "arm" in English, while Mercedes is often a female name. Therefore, it is typically white in color as a reflection of the predominantly white Spanish population.
