For those who don't know how this works, Turkish street coffee has fine coffee grinds and water added to a special wide-bottomed pot called a cezve, and then they are mixed and placed in the hot sand. The sand evenly heats the vessel, and the coffee foams to the top. The cezve is removed and added to the sand three to four times and served in a small cup. It's this rapid foaming that you're seeing.
I like how this is literally the only real explanation yet you got three likes and everybody else talking about boiling sand you get thousands when that s*** is super obvious.
And to be honest I still don't really grasp of what you're saying, it's kind of insane how complex this seems. I wish I had a diagram of the cup

Not gonna lie to you i completely missed out on the sand part while watching the video, my brain glitched and I thought THAT was coffee that he was harvesting for his magic metal cup to magically boil.
Just got it, it's just clicked guys. It is less complex then we were thinking. It's a solid cup with no holes. What OP is saying is that the water that is added becomes SUPERHEATED by the sand. The sand is probably at least DOUBLE the boiling point. This cause the thick coffee slurry rapidly evaporate in a explosion of foam.
And what the customers end up getting is pretty much just the foam coffee that condenses back once the phone cools in the cup. The magic is that they're pretty much getting the essence of coffee inside the foam.
