This is so extremely not advisable to do if you don't know what you're doing in this case he was very lucky about the chickens position in the egg and so many other factors that it would be a laundry list to go into but assisted hatching is a very very very delicate and dangerous thing to do and you can easily kill the chicken by assisting with the hatch if you don't know what you're doing blood vessels and everything play huge role and obviously the chickens are attached to their egg and if you rip apart the wrong part you'll kill that chicken regardless please don't be trying this at home without knowing what you're doing.

I wish I could believe this fairy tale -- usually birds require the pecking-out-of-the-shell exercise to become strong enough to survive.
If a bird doesn't survive after an assisted hatch, it's not because it didn't get it out itself, "exercise" isn't what it needs; it's because it had a defect and was not healthy enough to survive under any circumstances, or because the person assisting it damaged a blood vessel and it bled out.
People do assist hatches of their ducks and chickens and they'll often survive if it is done correctly, but it is dangerous to the bird. Until they have absorbed the yolk, they are connected to the egg by blood vessels. If someone pulls them out it can damage those and they will bleed to death. So the correct thing is to provide only enough assistance for them to get the rest of the way out on their own (in this video they helped too much) once they know they have absorbed their yolk, and to only assist the hatch if there's no way for them to do it on their own, like if their head is in the wrong position or if they got too dry which makes the inside of the egg too sticky for them to move.
If the bird is too weak it will die no matter what. This one was very healthy but looks like it formed inside the egg in the wrong position so it couldn't turn itself around to "unzip" the egg. Kind of like a human baby in a breech birth; nothing necessarily wrong with the kid, but intervention is required to get them out.
