    Hi Michael, the Peruvian red onion relish is called sarza criolla. It is not the same as the Mexican pico de gallo. I am really glad you came to Peru and enjoyed traveling freely before the pandemic. Stay safe, and come back soon.

    What you called "pico de gallo" when you were eating the Causa, it's called Sarsa Criolla. We don't use Pico de Gallo in our food. Great video and very informative.

    Most authentic Peruvian restaurants don’t marinate the fish in 3 or 4 hours. That’s erroneous information (maybe like 20 years ago, some restaurants used to do that to appease tourists’ minds). In reality, most Peruvian restaurants just let the fish marinate in the juice for a a few minutes, so as to not kill the freshness. In today’s restaurant standards in Peru, the fresher the fish is served (a la sushi style), the better. It’s tastes less funky and more delicious this way to them.

      Will Olaguibel, different strokes for different folks, but most Peruvians in Peru prepare ceviche the instant way. A few minutes with lime and it’s done.

    The Guinea Pig is not a special occasion dish it’s a dish that mostly is seen and eaten in Cuzco, Pucallpa, the indigenous people eat it mostly. But you do see it in some places in the city Of Lima.

    Michael, I love this video ... not because I am Peruvian, well if I let myself be influenced a little😅, but I like how nice it can be for foreigners to try fruits and foods that perhaps in their countries do not exist and see The reaction in their Faces That tastes great. Well I tell you something, I ate the guinea pig and you're right, it is prepared on special dates. For me it tastes good, but I think it's a matter of getting used to it, I know people who don't like it, I don't know if you would eat. well I loved your video is informative so people know what to eat, I feel proud that they name Peru ''gastronomic capital ''and it is for all this and much more ... greetings and keep up with your videos that are excellent and I guess that until now you will have learned some magic trick 😅😁

      hugh neumann no, it’s not at all. As a Peruvian eating ceviche for 50 years i can say that marinating fish for a couple of minutes is a very recent trend. We have always marinated our fish for over 20 minutes.

    The potato pie looked like a dessert, rather than main course. We eat lamb, and veal in the west so guinea pigs not that far off the range. Great to see the different dishes.

    Was really funny trying peruvian fruits, the first to do is ask how to eat that fruits, granada and granadilla = never bite the seed, only taste the sweetness part of the fruit, but the better part of a travel is ask and show the people that you are prepare for a Journey.

    PERU is not just lima you sure go cost,sierra and amazon south and north a lot to see to eat and enjoy and when you try ceviche you do piece of fish,onion,corn and some juice all together wich is leche de tigre do it with spoon my brother.

    Eating Guinea Pig as a sign of affluence is a bit of a stretch. I would just say that they'd be eaten for dinner, and can also be served for special dinners. If it was a sign of affluence, my family en la sierra (the mountain region) would be seen as mightely rich people. They are rich in life, but not monetarily.
    But I am soo jealous of the food you're eating right now. Madd good vid!

    SARZA CRIOLLA...No Pico de gallo.
    Ceviche Peruano. Cooked in Lime juice (no stove)
    Causa: potatoes seasoned with ají amarillo, lime, oil, salt and pepper + filling with chicken or Tuna.
    Is not "chili, is AJÍ"...Ají amarillo, ají Limo, ají Rocoto, etc.
    Coast, Mountain and jungle...huge food diversity, races, weather, and customs.
    Quinoa is a SUPER FOOD.

    WRONG! You don't marinade the fish in lime juice for 5 HOURS. COMPLETELY WRONG.
    Cebiche only takes a few minutes to marinade in lime juice and then is ready to eat.

    For cebiche, fish is not marinated for 3-5 hours! It's just a couple of minutes!!! Other than that, you gave a generally accurate description of Peruvian food. I loved your video!!!

    Peruvian ceviche is not marinated for 4-5 hours. It’s really made at the moment and eaten right away.

    one correction "el ceviche" is never marinaded in lime juice 3 to 5 hours, that is false,
    it is actually made fresh at the moment always, if someone told you that clearly doesn't know
    what a ceviche is.

    2-3 hours for marinating fish? rarely. And guinea pigs are eaten regurarly over the country, it just is more often in the mountain area.

    It’s not Pico de gallo = it’s Sarza/Salsa criolla. It’s usually Yellow pepper ají with red onion, and tomato. Marinated in lime, salt and pepper.

    I dont know if you knew this, But if you group all the traditional peruvian dishes, including main dishes, soups, desserts, etc In all the different peruvian varieties, you will end with and amount that overpass the 3500 traditional dishes. This means , if you just decide to try one of them each day, you will end trying all peruvian traitional food around after 10 years. Thats why even not peruvians themselves tried every recipe.

      There are aprox 3500 varieties of potatoes, but I believe the number of traditional dishes (not including soups, salads, appetizers or desserts) is around 500. Correct me if I'm wrong.

      @@PeruchoPastrulo Wrong dude, 500 was the number of main dishes some years ago (it doesnt count desserts or soups). But something you need to understand is our culture use cooking as a way of expression , so we continue creating original dishes and over the time they turned traditional too. Man Just in traditional soups the number must be about over 2500 by now.

Lets say, you are from China or from Japan... or maybe at least from USA, maybe you are able to think something like "technology is well developed at my country", isn it? Not need to exagerate anything is just the way it is. Even more if you are from a poor country or from a non fist world country, probably the differences between your country and china or japan will be more notorios , is it? Thats because those countries based their activities on that, is part of those cultures. SO, is funny you asume I am exagerating whitout any knowledge about my culture xD lol, but sadly for your assumptions we here at Peru, are part of a culture even much older than the Incas. Our gastronomy beguns 5000 years ago, 3000 years before Christ, at CARAL, we are the OLDEST Culture at all AMERICA continent. SO dude I am not exagerating , is a work from thousands of years. You can search the info , it must be there at internet and be sure about this, the number is still growng up right now. I am not even close to tried every traditional dish from my own country and I understand why people cant believe how big is our culinary legacy; well at least until they visit us. Is a shame it took so much time to the world to notice us, but we didnt haved the luck to be neighborgs from the rich fat kid of the hood to sponsor us (USA) SO dude, I was the one laughing at you all this time, but is ok, you are still invited to visit us, we will share with you :)

    Actually, they don't marinate the fish for those hours, if they did that ... the fish would be parboiled, adding the lemon will take it directly to your table

    About the Rocoto, let me explain you what happened, Cody explained it was a Pepper, right? WRONG! That is a ROCOTO, it looks like a Pepper, but is much stronger and it has a different flavor, they even came from different kind of plants. The Rocoto is more like a kind of AJÍ (for peruvians) or Chile (for mexicans)

    We never let the fish be cooked in the lime juice for hours, only few minutes.

    Rocoto relleno was spicy because you are should not eat the rocoto (red veggetable) just what is inside it.
