    The water off my potatoes I keep and add to my homemade soups. I do that with all juices from vegetables. I keep it in the freezer until I am ready to make my soups.

    Love my baby potatoes canned with skins on. I melt a little butter or bacon grease in a cast iron skillet, add the drained potatoes and pop them in the 425 degree oven after the cornbread comes out. 10 minutes. Perfection.

    Add baking soda to the warm pan with water and a little dish soap. Let it set for a little while and clean up should be a lot easier.

    Wanda I really like the almond cake and you know what you could do you probably have frozen strawberries or frozen blueberries or peaches whatever you could make a fruit topping would your cornstarch and a little sweetener of your choice are used honey and served at on the side where you could top it on your on your slice of your cake I think that would really go well I'd much rather put fruit on there than I to what do you think

    I've used a gas stove for the last 15 years and taught myself to cook from scratch on them, we moved a few months ago to our homestead and you ain't kidding a flat top is a devil! So far I have been doing ok, but I miss my gas stove! It is easier to clean at least. I have red potatoes I canned last year, I'm going to try this, looks good and easy. Thanks!

    I enjoy fried potatoes from canned potatoes better then fresh potatoes. Great tip. Have a friend who is gluten free. Will give this a try . Would love to be able to give her a good cake for a surprise a gift.

    Wanda! Throw a tablespoon of baking soda in that pan water and when you get ready to wash it out you could do it with a sponge; it really breaks up anything stuck to pan. Easy peasy!!

    We're not allowed to open a jar when we have fresh. Lids are too expensive anymore. But canned and fried is pretty good, they are different than fresh fried,but good.

    That's the way I make potatoes -- my kids love them. Now I think I'm going to have to grow more and can them. I know you said they don't get mushy but how do they slice or cut after taking out of the jar? I'm guessing you wouldn't want to can them in smaller pieces.

    Wanda I have rosemary, how do you make rosemary powder. Do you dehydrate it and then grind it. Would love to see a video of drying herbs.

    Danny and Wanda...Thank you for all you do. Please tell me if its neccessary to peel potatoes before pressure canning??? I canned 50 lbs of organic potatoes with the peel on and now others are saying that's dangerous should have peeled them... 🥴🥴🥴🥴💔💔🙏

      I would peel any that you don't grow, but the organic should be fine. I would eat them. Just check when you open to see that they look, smell and taste like a potato. LOL From this point on, peel any that come from a grocery store.

    Danny I am so sorry if my question about what you call different foods (like Irish potatoes) made you self-conscious about your terminology! I think it is awesome to hear what folks call things in different places. And I wish I had a gas stove rather than my smooth cooktop :-( have not been happy with it since day one. Thanks for the great recipes!

      I am glad to hear - also I want to say I have very deep respect for you both. You work so hard each day but you find joy in it as well. I face a future of reduced means as I age and I am learning so much from your videos and chats (as well as from others I follow). I bought a dehydrator this year to help reduce food waste and to be able to squirrel things away when on sale or when I have extra money. Even though I live alone I am considering a small pressure canner to do things like corn and potatoes when in season here at the farmers markets. I only have about 20' x 20' of garden space but am working to increase it through pots and such. So thank you...

    Ok, for me, that would be one serving. Yummmmm. Fried potatoes are my favorite. I do use my cast iron for frying everything. I cannot fry in the stainless steel. Everything sticks too much. Not so in my cast iron. I adore red potatoes. Because I hate cleaning up the grease spatters that get on EVERYTHING, I usually opt to roast the potatoes in the oven. If we ever get a gas grill, I will fry outside. lol

    Moving into a home with a glass top stove . Are you able to use a canner on your glass top stove ? I have an All American Canner .

      I don't have the All American Canner, so I wouldn't know about using that one, but we use our Presto on our glass top. You have to be extremely careful not to bump or drop it. Caution is necessary on a glass top.

      I had a glass top stove and an all American Canner in fact I had two canners. And I use them on my glass top stove with no problem. If you wanna call it a problem the only one I had was when you move the canners it can scratch your glass top. The reason I don’t have a glass top anymore is because we moved, and there was a stove in the new house didn’t move my old one.

    What kind of onions did you plant? From my experience, only Short Day types get big at lower latitudes. Also, to get big onions, you need good green growth. I add a tiny bit of bloodmeal in my planting trench for nitrigen. it repels gophers too,, but encourages dogs to dig new transplants up.

    yumm like pan fried potatoes, a tip to keep food from sticking to the pan is to heat pan up before adding the oil, the rule is hot pan cold oil food want stick.

      I think you can substitue, I just don't know the ratio of sugar to stevia. If you are used to using stevia, then it should work. Thanks

    Mmm! I like that tip of pre-coating the potatoes in oil before they started frying! I'm like you...if I've just reseasoned the cast iron I switch back to stainless! I noted you soaked the pan with water for easier clean up. I wonder if you'd like to try deglazing the pan while still hot with a couple splashes of vinegar to pull up all those tasty brown bits and notch up the flavor profile on your taters? I purchased my stainless fry pans from Home Shopping Network from the Wolfgang Puck line. I had NO idea the fry pans would clean up so easily until he demonstrated how to deglaze them while the pan was still hot! After swishing a little liquid he could scrape together a quick gravy and then simply wipe them clean with a towel and they're shiny and good to go! Anyhoo, he used water, wine, vinegars, etc to mwouldn't​ini pan sauces out of the browned bits.

      So you switch back to stainless just while you break the cast iron seasoning in again? I missed those comments in the video (probably daydreaming about those taters! LoL) I want to get some cast iron but have heard different things about induction (smooth top) ranges not working well with it.

      HaHa Janet, it's funny how seasoning that cast iron makes using it a premium experience. As for smooth top cooking I've heard only negative experiences myself. I'm not sure if they are the same technology as the little units all the Pros are touting on the shopping channels. We purchased a Ming Tsai induction cooker and as far as I know if a pan bottom can hold a magnet the induction science will work. Are your concerns more along the cast iron texture being too rough? I've also heard some folks cracked their smooth tops with the heavy weight enameled pots like Le Crueset. I would recommend you find a small, vintage cast iron pan at an antique store and Google how to restore it. I think my little pan makes the best Sunnyside up eggs!

    Can you can raw potatoes? I mean no pre-cooking before you put them in the pressure cooker?

      It is not adviced. We only pre cook for a few minutes, not as long as the book says. That way the potatoes are slightly blanched and not cooked before you can them. They will remain firmer. Thanks

    Would you have less sticking problems if you allowed those spuds to drain dry in a colander/sieve and patted them with kitchen towel? Wanda, have you tried the cake you make by boiling citrus fruit and adding ground almonds? It is DEE-VINE!! It's criminally easy to make because you do it all in the food processor or blender, is gluten and fat free, freezes beautifully & improves with keeping!. Oven @ 190°C/375°F. 3 Oranges (mandarins, tangerines even lemons ) to make about 375g, 6 lge eggs, 225g sugar, 250g ground almonds, 1tsp baking powder. Put whole fruit in a pan of water and simmer for up to 2 hours (depends on which fruit & how big, littler fruit 1 hour, needs to be really soft & tender) when cool enough to handle cut in half and remove the obvious seeds then puree the whole fruit, skin pith and all, stir in the eggs, almonds, sugar & baking powder (if you don't have gluten free bkg pwdr you can leave it out). when it's all combined pour into an 8" round (7" square) buttered (I lined the bottom just in case) tin. Bake for 50 to 60 mins, check at 40 and if it's browning too quickly cover with a sheet of greaseproof or foil. Leave to go cold in the tin & voila. If you try it with Lemons you'll probably need more sugar. I've made it with Oranges, Mandarins & Clementines & each one is fabulous.. If you feel like being fancy you can glaze with an Icing Sugar/Fruit Juice glaze and sprinkle with chopped pistachio nuts. I think Danny will like it. I do 😂
