- If you're looking for a delicious bowl of a heartwarming Irish Stew, look no further. This stick-to-your ribs lamb stew is a winner in my home year-round. Fun fact about me - I'm a dual citizen of Ireland with my parents being from both the North and South of Ireland with relatives all over the country. When we had our first family trip to Ireland, the first place we visited was the Guinness Factory and what an amazing treat that was!! Opened in 1759, the Guinness Factor was a 1/2 day experience for us. We watched how they made the beer, taste tested various drafts, learned the history, and ate the Guinness Stew they served in the cafeteria. Can I just tell you HOW AMAZING it tasted? I had never had a stew that delicious in my life and it was at that moment that I told myself that I needed to perfect a Guinness Irish Stew for my family - and so I did!

Loved the recipe. Seared meat and veggies but then put in slow cooker on high for six hoursz It was THE BOMB!

This was delicious. The sauce is thick and rich with robust flavor. I served it with a warmed crusty loaf of bread and Irish butter. I sprinkled a little salt and pepper on top, a very hearty meal. Thank you.

Roma easy galric. Bit time consuming but worth it. Get a whole load of good garlic. peel throw in processer to however you want them. transer to jar, cover with olive oil. lid on. Keeps in fridge for ages.

I just did my stew, minus the parsnips. Didn’t have those available down here. Turned out excellent. I did use a Bayleaf thyme and rosemary. One thing about using Guinness drought. It can have a bitter taste. However I offset that with some fresh lemon juice. Can’t wait to do more experimentation on this wonderful creation.

What do you think about using beets? Beets can be very naturally very sweet to balance out the bitterness. Or would regular sugar be better?
I don't like lemon in my soups which I didn't realize until my mom made borscht which I loved because it had no lemon in it. My dad made it with lemon and I never realized why I hated borscht until my mom made it different without lemon.
Plus beets are a root so something which can be thought of as typically Irish.
Stews are always at their best the day after. If u can resist leaving it lol. If no bread serve with mash. I'm going to try this thanks.

Im going to try this. I live in Ghana, so the guinness is sweeter than the original irish guinness. I think the original irish guinness is too bitter for the Ghanaian palate, but still going to use it. I g

Interesting variance on a traditional stew recipe, we love leeks so we will certainly try it. What we do is to marinate the meat overnight using the ale or your preferred dark beer. Also, we do not use flour, it is not needed and helps make the recipe a bit healthier. Along with the turnips you could also try adding rutabaga.

Looks fabulous … I plan to make lamb stew for Saint Patrick’s Day. If I have the time I will make lamb stock the day before and use that instead of beef broth. When I make the lamb stock I use Rosemary, Thyme, roasted garlic and a Bay leaf.
For the meat the lamb neck is the best is you can get it.

Hi Karl. Thanks so much for your comment. You can always add whatever else you'd like in yours, but I don't like tasting Rosemary in my stews. The alcohol in the Guinness cooks off during the process, only the flavour is left. You should be absolutely fine.

I had the stew at the Guinness brewery. I asked the person in the restaurant about why it tasted so good. She said the secret is a little bit of Honey is added into the stew. It balances the Guinness.

Where did you get your Dutch oven?
It's the Sur La Table brand. I bought it in their store. Their own brand is very good and is also made in France just like Le Creuset.

Hi Roma, found your recipe tried it over weekend. My family is not a big lamb family so I substituted beef Chuck into cubes..also had to delete parsnips.
Everything else the same and followed your instructions. Also used gluten free flower, my daughter is gluten free. It was amazing ..Thank you for the recipe

Oh en France on utilise tout le poireaux bien sur …. Mais quand on farine on ne le fait pas morceaux par morceaux 😀 car la farine brûlée ce n’est pas top, on la rajoute une fois que ta viande est bien revenue, les morceaux seront dorés quand même et là tu saupoudres toute ta farine en une fois, tu remues bien et Guiness bien sûr. Je mets les légumes que quand mes oignons et viande bouillon plus Guiness ont cuit au moins 1h et demi . Je remets au feu pour 30 mn avec les pommes de terre et carottes poireaux qui seront bien cuits mais auront gardé des vitamines et 10 mn avec quelques pruneaux pour juste enlever l’amertume. Super recette que 20 ans de gérance de pub irlandais ont affiné, car chaque année festival de musique irlandaise avec devinez quoi un ragoût irlandais en entrée, une fois le ventre bien rempli on danse, on saute, on rit , un p’tit whisky et c’est reparti 🎉🎉
what if you don't have the beef broth
Use Knorr beef cubes they are concentrated stock.
If you don't have beef broth on hand you can always use chicken broth or vegetable broth. When I haven't had beef broth on hand I've boiled a few pieces of chicken to make chicken stock so it gives me the amount of broth stock I need. As Maureen mentioned, Knorr stock cubes work great as well.
I’m on a Keto diet, I’m assuming I can’t have this !
It's not Keto Friendly the way I have it written. Don't you get a cheat day? Or, are you a Keto lifer? Carrots and parsnips aren't Keto friendly with their carb count, and then there's the beer. You could make it without the carrots, parsnips and potatoes. The onions, leeks and garlic are fine for the Keto. The alcohol burns off during the cooking process. You could sub out the carrots, parsnips and potatoes for 1-2lbs more lamb.
@@athomewithroma I have a modification of this stew using kohlrabi and removing the potatoes, flour and parsnips. I have used home made lamb stock and leftover slow cooked roast leg of lamb that I will have put in with about 40 minutes left to go. Carrots are not really a keto vegetable but when you mix keto with intermittent fasting some small extra carbs via the carrots is no problem. My stew is brewing up right now and smelling wonderful. Thanks very much for the base recipe - will check out more of your recipes.

you need to use the greens of the leeks, don't use garlic, olive oil or rice! these are not traditional; use meat fat or clarified butter to fry the vegetables and use oat flour as a gluten-free thickener

Stick the flour in a vrown paper bag add all he meat and shake it. Actually makes a better coating. This is also amazing when making fried chicken.

If you want to add a eastern European twist. Get eastern European parsley root and Celery root also add whole allspice and bay leaves 🔥🔥🔥🔥
No oil or Garlic , use Butter (irish) and Rosemary and Thyme

I was in Dublin for holiday, the pubs had great stew and that’s primarily where I ate all my meals.

Hello, Prince. Yes, if you chop it up in cubes or in similar shapes to cutting up a parsnip, it should work just fine. It's a root vegetable as is Taro root so they should be interchangeable. Let me know how it works out for you!
