Turkey tails - and what to do with them.

- Never ate turkey tails? You're missing out! They can be eaten deep fried, or baked. But the best way to get the full flavor is to smoke them.
Do they taste like turkey? No. Smoked, they taste like juicy smoked pork.
Brine:
Per 1 quart of water use 3 heaping tablespoons salt and 1/4 cup brown sugar. Submerge tails overnight or up to 24 hrs. If the tails are crowded in the brine, make sure to turn them once or twice. Brining is not necessary, but does add to the flavor.
Smoke at 250F for approximately 4 hours.
The whole tails can be used like pork to season beans, soups, stews, etc. The smoked tails can be eaten as is, or the meat can be pulled off. The leftover bones make a delicious, rich broth.

He would dip the turkey tails in a massive tub of mayo and go to town. It’s really sad he couldn’t get it together at the end and let his addiction to food ultimately kill him. They said WWE sent him and Vader to a fat camp end they would come back weighing more than when they left. They were smuggling in food like its contraband at a jail lol.
It’s pretty ironic too that Yokozuna and the rock are from the same blood line. RIP to one of the best big men ever to do it. RIP Yokozuna and Vader ! We gotta take care of ourselves !

Been eating these since my 20's. Glad not too many people know how delicious they are, or they would be a hellava lot more expensive. I mean, just look at the price of Oxtails these days.😢

You can also add these to cabbage & collard greens mixed.

We eat turkey tails all the times. We plug the tips of the furthers off, and much easier if you boil the tails for 10 to 15 mins, drain the water, pour the cold water to cool down the tails than pull those further tips off. They come right off. Also it makes the tails tander and not tough and make your cooking time shorter. Then marinate and cook your tails anyway you want. My favorite is barbaqued turkey tails, and my husband is frying. We cook the turkey tails just like you marinade and cook chickens. Welcome to the world of turkey tail good eating🥰Thanks for sharing.

@@homesteadinginnorthflorida It's a recipe from Guam called kadun pika. There's a recipe similar to it called stafao, but only difference is using vinegar and no hot pepper.

I love these things grilled when you can find em. Rare to find here in texas. I use my bbq rub first, grill em about 20 minutes on high heat. Then wrap em in foil with Italian dressing for an hour. Delicious.
I agree, they really are super hard to find. I was really lucky. I have never grilled them, but it sounds scrumptious - especially with the I Italian dressing. The vinegar in complementing the grilled fat.

I've slow braised them, then baked them in the oven and brush with teriyaki marinade/sauce to form a glaze. They're fall apart tender and develop a thick sauce. So good! Then I reserved the braising liquid and used it for other stuff.

This is the comment I was looking for. I normally bake mine first but my daughter marinated it some bomb homemade teriyaki like sauce, so I wanted to slow cook first then bake. I’m gonna try it your way. Thank you.

We Pacific Islander love turkey tail. At lest your turkey tail don’t have parts of the feather stuck on them. I remembered wen I was about 13 years old I got sick wen I first ate it but I got used to it. I’m 63 now and still eating it. We barbecue them too or make soup or chop suey with vegetables
Oh you have a lot more experience enjoying turkey tails. The one and only time I had them so far was when i made the video. The feathers .... they weren't visible. But when the tails shrunk on the smoker, there were little stubbles. I pulled them out and it was indeed the base of feathers. I could not bring myself to eat that part, hence I separated the fatty parts out. That's just me being picky, though, I'm sure if I had them more often I would not bother anymore and enjoy them feathers, fat and all. Greetings from the mainland. :)

Next time try grilled them. Make sure boiled turkey tail to medium rare. Then mixed with bbq sauce. And put it on the grilled. Yess yummy

I heard about it. It puzzles me though. where all the tails come from. in Polynesia. I never heard of a thriving turkey industry on the islands. Given that there isn't a whole lot of meat on a tail, I suppose it's not eaten regularly?

I boil my turkey tails until they are tender. Once cooled off o take it off the bone and put it in marsala sauce, tomato paste, chopped onions, green peppers and cilantro on a bed of red beans and rice

I'm trying to cook some tonight, I put 5 in a pan and put a reel inside the pan so they didn't touch the bottom of the pan plus water.. and in the oven is that okay

What do you use for marinade?
Salt water. If you wish you can throw in cracked peppercorns, other spices, herbs etc, but it's really not necessary. I doubt one can detect it after it's being smoked.

I didn't think they looked icky or sounded gross, but having just tried some cajun turkey tails I now think they're icky and gross.
The seasoning was excellent though, too bad it wasn't on real meat rather than a nasty hunk of skin, fat, and gristle.
I usually roast them in a pan..... Low and slow. 275 degree oven for 3 hours, then turn them over and set each tail on a 1/8" slice of brown onion (to get them out if the drippings), give them another two hours and they should be brown and crisp on the outside, moist and tender on the inside. Pat them on paper towels to get the fat off and serve them on the bone as appetizers,
The onions should be served on toast points with the tails.
And don't waste the rendered fat. It's on par with bacon grease or duck fat to cook with. Try using it to coat oven roasted potatoes or fry a grilled cheese sandwich! Delicious.

@@homesteadinginnorthflorida Do I own a restaurant? Heavens no... I got my recipe for turkey tails from my grandparents, who learned to cook them as a treat during the Great Depression....when they could be bought for far less than most other kinds of meat or poultry.

Most of them can order a 10 or 20 lb. case of them from their turkey/poultry supplier if you are willing to promise to buy at least half. (...of course, it helps to have a freezer in the garage ...)..

2:14 is the brine, not cooked. just submerged in cold brine. Brine recipe is in the vid description. :)
Is the skin supposed to be tough, and the meat tender, I had bbq Turkey tails with baked beans and potato salad, my hands were covered with goodness
The skin definitely turned out a bit chewy. And very tender meat. :)
Where to find fresh turkey tails?
I really don't know. I was lucky and got these from friends who have an organic farm. I've never seen them sold in stores. Not in my area, anyway.

Yes, extremely oily. I cut the super fatty parts off and just used the meat part for the dishes I made with it. The drawback with that is - it takes a lot of tails then to feed a family.
Umm....uhh...so many ways to respond to this " Oily Tails " subject that I don't know which way to start. But I'm all in, either way!

Not many places sell them, I suppose. It's the forgotten meat? I got those from a farm here in Suwannee county. www.pasturedlife.com/. They raise all their animals on pasture and process on site.. It's always fun to try out new things.
