    Pan size is 16cm/6"圆模
    植物油 vegetable oil 40g / 3Tbsp
    可可粉 cocoa powder 10g / 2Tbsp
    牛奶 milk 50g / 3Tbsp
    糖 sugar 20g / 3Tbsp
    蛋黄 egg yolk 4
    低筋面粉 cake flour 50g / 4Tbsp
    蛋白 egg whites 4
    糖 sugar 40g / 5Tbsp
    Bake at 150°C / 300°F in water bath for 80-90 minutes
    摄氏150 / 华氏300 水浴烤法 80-90分钟

    This is the first time I finally succeeded in making a sponge cake. I used valrhona cocoa powder and baked it for 70 minutes. When my husband tried it, he smiled satisfied.

    This cake become our family regular dessert or snack. Due to gluten intolerance, I replaced the cake flour with brown rice flour, it still taste so great! Thank you for your recipe!

    This was really good. I added 1 tsp of instant coffee granules and a pinch of salt to elevate the chocolate taste. This is definitely the go-to chocolate sponge cake for me from now on!

      I have one doubt can we add egg white mix to heated chocolate mix or shall we need to cool down the chocolate mix? Please reply

      ​@@thommandrusravana6500 It's been four yrs I doubt you need this anymore... but no the chocolate mixture isn't heated at the end, or shouldn't be, anyway. Even though the oil was heated in the beginning, it should've been fully neutralized by all the added milk and ingredients (notice how the egg yolks didn't cook).

    مكونات باللغة العربية
    الخليط الأول /40 غ من الزيت يعادل 3 ملاعق-10 غ من مسحوق الكاكاو يعادل2 ملاعق-50 غ من الحليب السائل يساوي 3 ملاعق-20 غراما من السكر يعادل 3 ملاعق- 4 صفار البيض-50 غراما من دقيق الكعك يعادل 4 ملاعق --الخليط الثاني /4 بياض البيض-40 غراما من السكر يعادل 6 ملاعق -
    خبز بدرجة حرارة 150c في حمام مائي لمدة 80 دقيقة

    Dear Mrs Apron can we make in rectangular tin. As I wanted to make in round one, but since I dont have that much width one so I wanted to make in big rectangular tin.
    Can we use wheat flour instead of low gluten flour

    請問蛋糕烤好後.要繼續在烤箱呆一段時間在拿出來嗎?還是可以之間拿出來倒扣?為什麼我時常做出來的蛋糕都會回縮?可是當在烤箱看起來明明就很漂亮.出來就變得很小一個.

      你好yap ruby,如在烤箱呆着门需要开一点小缝以防止烤箱温度过高。蛋糕回缩可能是烤箱温度太高,你也可以烤好后马上把蛋糕取出在桌上敲几下也是可以防止回缩的

    第4分钟,最为关键的画面没有给啊,当你提起打蛋头,蛋白的小勾形状是最能说明到底是打发至中性发泡还是干性发泡的,从后续的图像判断,你应该是打发至干性发泡的。

    I baked today the cake was soft and fluffy. I bake sponge cakes using similar method before and 6 x 3 (h) inches round pan is usually just nice for recipe with 3 large eggs. I thought for choc sponge would be different but my cake domed so high and cracked. Too much cake batter? Temperature too high? Next time I would probably use two 6in pans to make 2-layer cake or just reduce recipe accordingly to 3 eggs. However good spongy light cake with just tinge of sweetness. A keeper with minor tweak :)

    是否就是加熱過的油倒入可可粉改為(低筋麵粉呢)
    另外烘烤時間一定要高達80分鐘之久嗎
    改60分鐘是否也能成功呢?

    Dear Apron, my oven has Steam Convection function (the oven will have steam + convection during baking) so I don't need to water bath in another tray with water manually. But my oven lowest temperature is 190c for Steam Convection function. I tried 50mins, it is overbaked. The top bit burnt. It shrink and is not fluffy. How many minutes should I adjust? Please help. Thanks in advance.
