Hot And Fast Pulled Pork On The UDS | Chef Johnny's Pulled Pork Recipe On The Ugly Drum Smoker

  • Shop at Cabela's cabelas.xhuc.n... This hot and fast pulled pork was so good, I am not sure I will cook pulled pork low and slow again. Last fall I had a chance to cook with Troy over at T-Roy Cooks. We cooked a hot and fast brisket using Harry Soo's hot and fast brisket method. Well since then I have cooked a few hot and fast briskets. So I used Harry Soo's method to cook this hot and fast pork butt on my UDS. I decided to use my ugly drum smoker to cook this hot and fast pulled pork. If you get a chance to cook a hot and fast pork butt or a hot and fast brisket I would recommend that you do it. Just use Pitmaster Harry Soo's hot and fast brisket method and adapt it to work for you like I did. This hot and fast method that I used made some fantastic pulled pork.       I love squirrel, but the wife and kids are not much on it. The only wild game they really like is venison. Anything else they really wont try.

      Wild hog can be different. It depends on where it came from. Sometimes they are leaner unless they are eating good and then they can have plenty of fat. If it is a lean hog injecting might help get moisture into it. But overall the method would be about the same.

    I just did two pork butts last weekend. NOW I want to do it again and try hot and fast. I was just thinking Hot & Fast would be 350*

      You could probably go 350 all the way through. But that 400 did help form some bark.

      Allot of people are cooking that way Jerrad. I think what cook off you are whether it will help or not. I was with Chicken Fried BBQ in a small town cook off here awhile back and I think it hurt us. we will got 6th so not bad. We tasted the 3rd place brisket and it was a 14 hour cook on mesquite.
