- Rolls are a popular street food across India. Eating a tasty kebab with a soft roti or bread is a classic and is served in every regional cuisine of India. Kolkata happens to be famous for Kathi kebabs and many versions inspired from there exists in restaurants around the world.
Kathi is a wooden stick used to skewer and roast kebabs either vegetarian or non-veg. So a #KathiRolls is a #kebab on a chapati with accompaniments traditionally but now you can make your own roll. #Frankie served in Mumbai street food is very similar to the Kolkata Kathi rolls.

Ingredients
For the dough-
Maida - 1½ cups
Atta - ½ cup
Salt
Oil - 1tbsp
Water - as required
Butter - for basting
For the filling-
Oil - 3 tbsp
Cumin - 1tsp
Coriander seeds - 2tsp
Ginger chopped - 1tsp
Garlic chopped - 1tsp
Green chilli chopped - 1tsp
Butter - 1tbsp
Turmeric - ½ tsp
Chilli powder - 1 tsp
Coriander powder - 1 tbsp
Tomato puree - ¼ cup
Salt
Onion diced - ½ cup
Capsicum diced - ¼ cup
Yellow capsicum diced - ¼ cup
Red capsicum diced - ¼ cup
Water - a dash
Paneer diced - 1 cup
Kasoori methi powder - ½ tsp
Coriander chopped - a handful
Cheese slices - 4nos
Mozzarella cheese grated - ½ cup
Salad leaves - a handful
Salad-
Onion Chopped - ½ cup
Tomato chopped - ½ cup
Coriander chopped - a handful
Salt
Pepper Powder
Lemon juice - 2tbsp
Green chilli chopped - 1tsp
For extra shots-
Paneer Tikki
Leftover Paneer Mixture - ½ cup
Potato Boiled & mashed - ½ cup
Coriander chopped - a handful
Salt
Garam masala - a pinch
Bead crumbs - ¼ cup
Oil - to shallow fry

Probably because this is not what a typical Kolkata roll is. Kolkata rolls are hot and tangy, and cheese will kill it. Nor are they ever made as a chapathi / rumali -- it's always a fried maida paratha, mostly a lachchha paratha at the best joints.
In a nutshell, his filling and presentation are inauthentic (the paratha looks suspicious in color and dryness too), and his research isn't very good either.
As a chef he has every right to be creative, but this sounds very much like he doesn't know the original version at all.
As a side note, most people in Kolkata are non vegetarians, so egg rolls followed by chicken rolls are the most representative.

Wow I made it today , it was the yummiest frankie I have had,, but with a little twist, I added omelet on the paratha with some green chutney, and instead of salad, I added only sliced onion , and lots of cheese, thank you for such an awesome recipe chef ! Hope you try this:)

Masterchefs we all wanted to say u that plz start the jr master chef 2020 I knew there is corona pandamic but all tv shows reality shows are started in Australia jr. Mastrchef is started in India on star plus tare zamen par is started plz don't refuse sir I plz start the show sir plz all sites I went sites of jr.
