    Apart from the tongue-in-cheek moments (quite literally), we came to a realization (for the 100th time) about how we keep forgetting to do ‘Call To Actions’ for our audience to subscribe to our channel.

    A big thank you to Odette Mascarenhas & Joe Mascarenhas who joined us for the episode. The family has done much to bring the Goan culinary experience to the wider world through their many endeavors from books, to culinary clubs and publications.
    We must include Nolan Mascarenhas in the comment, Odette and Joe's son, who is carrying on the traditions of the family that started with the Great Masci and sharing his love for his home state and its food through writing and blodding about it. It is Nolan who helped The Big Forkers team find many of these gems. He was an important part of the research and connecting us to the chefs.
    We love that our passionate fans take our cases out in the comment section when we stray from our usual style, but that's the joy of doing this, we get to break the rules, even our own. We try new stuff, we share our experiences, our learnings and adventures. Don't pull back on shredding us.

    I have been to Chef Peter's Kitchen s few times and it just keeps getting better and better every time. A fantastic place. Just love to visit the restaurant. Chef Peter is an awesome host.

    Paying ode to chefs and writers who fight to keep the legacy alive and relevant need not always be entertaining but is necessary. Fish cake and salted Pork looked like a fine example of clean cut flavor where less is more. Boys dont need to play well always…sometimes viewers have to samjho the bhavana and salute the big forkers team for featuring and respecting Chef Peter aka the Rassi man !

    Damn those dishes are new.
    Except for the tongue, which is served at some places in Goa, others are totally new. A mix of Goan Portuguese & Hindu style mix is a new one - totally.
    Stuffed squid looks amazing, though Shanky will disapprove of it but I think it something I haven't seen.
    Mixed meats is so difficult to get right as each fat tastes and melts differently with its protein and the latter needs different temperature / techniques to enhance its taste with its native fat - so an amalgam of a few and then to get it right - wow that needs skill.
    Lovely, another gem discovered. And love the way Sid has savoured it - as he says I have no shame in this game.

    Kazaracho reminds me of the Danish Stew or the Sailor's Stew I had long time ago. Its really nice to see old dishes that have been forgotten with time as we are trying to modernize everything and cut the cooking time. I am sure that it would have tasted superb ! One thing that I have noticed, especially with Shanky is that he likes simplicity in a dish and not too many permutation and combinations of ingredients, when as Sid likes complexity similar to Interstellar >Tenet > Inception.

    A quite shanky is not liked. Sid in his elements as usual. The squid did something that it should not have shanky? And that too in your mouth. That expression was worth a re viewing of the episode.

    Seemed like shanky held back due to the presence of Goan food royalty at the table. He didn’t like the food but didn’t say shyte at the table. Always good to have the experts share their views but most of us come for the raw shyte sid and shanky share about a place. I don’t even agree with TBF sometimes, and I think sid is too boujee 🤣🤣🤣 but I keep coming back cuz they stay true to who they are and I have to respect that. What I’m trying to say is start another series with food experts , for reviews we need just you two. 😎✌🏼

    Loved the history being a goan chef peter shared original recipes that my mom and dad would cook be it the stuffed squids the kazaracho stew. The salted pork amsol. Such fond memoeies and till date these are what is cooked at home. The big guy missed his name i absolutely thought was at his A game he knew his food from its history to how to relish. The other bearded guy was wasted at this place he could have been almost invisible and it didnt make a difference to the episode. I think he has zero food critic skills, zero screen presence and i would like to wonder why he is even there other than to just hog on free food. The big guy has my heart a kinda food crushing on his command over the language his knowledge and his love for food.
