Quite good video guys, pretty accurate to the traditional recipe. As a comment, here in Spain we don't ever cook using butter. Only olive oil. As well, for this recipe, when boiling the soup, you can add some Spanish ham or chorizo, chopped in small pieces. And we don't use coriander. Good video, and pretty well edited!

I had this soup at a fine dining restaurant in Madrid years ago and It blew my mind! I like it when some of the bread croutons are added again near the end as well. It lends a wonderful crunch and texture to the soup. A nice twist is to add sweet italian sausage during the sautee or yet shrimp even better.
I love how there's no commentary and delicious food is being cooked. It's wonderful!

We dont normally use butter for cooking, except for desserts. It's not a big deal anyway. Whats totally out of the recipee is the coriander. In Spain we dont usually cook with coriander, but with parsley
