1 Sweet potato with 2 eggs! Super simple and delicious sweet potato breakfast recipe
Ingredients and recipe:
1 Sweet potato
Peel the sweet potato
Cut the sweet potato into small pieces
pour some water into the pot
Add the diced sweet potato into the steamer
Steam for 15 minutes on medium high heat
After 15 minutes
Add sweet potato to a big bowl
Mash the sweet potato
100g sweet potato puree
¼cup Milk
2 Eggs
Mix well
Pour the eggs into the bowl
1tbsp Brown sugar
Mix well
50g All purpose flour
½tsp Baking powder
¼tsp Ground cinnamon
A pinch of salt
Mix well
15ml Melted unsalted butter
Mix well
A bit of oil
Scoop ¼cup sweet potato batter
Cook for 3 minutes on medium heat
Flip over and cook for another 2 minutes
Done!

You can probably have gluten free almond or coconut flour & dairy-free almond or coconut milk. They are delicious + maybe some pecans or walnuts. Best wishes.
