get a large glass fill with ice, put that glass in the freezer. keep the pepsi/soda of choice in fridge, put that in the freezer as the same time as the glass. wait 1 hour pour and watch it become a slushy.

They weren't actually doing something, they were actually checking something. The continuous stirring of bottles removes all the gas dissolved in soda and they tap it to check whether the bottle was ready to be poured or not, or else the fizz would never mix with crushed ice and just flow of glass like a beer.
