Something I always loved about Escanor is how, despite essentially being a God with his sun power, he takes pride in being a human. He could very easily call himself a God, and most people would say he is, but not Escanor. He took pride in being a 'mere human'.
Escanor was prideful, not vain. He deserved his power and he deserved being the strongest.

Really one of the most epic characters in anime, even if season 3 did have shit animation that fight was still fire.
When we first meet escanor and he is taken out in one blow by galand but in the morning he stands up and takes the axe is just amazing

I don't watch the show (too much anime to watch) but holy hell this theme hits hard. I watched ONE fight (Meliodas vs Escanor, trapped in some purple cube) and will likely watch this anime JUST to see more Escanor.
