IMPORTANT SAFETY TIP: Never heat river rocks that have been soaking in water (or use them to ring a campfire). Rock are porous and absorb water over time; the heat from the fire/cooking will cause steam to build up internally and they may explode sending out shards. Notice that this cook chose stones away from the water that have been drying in the sun. The short time to wash the stones does not permit significant absorption.

The rocks were used to preserve temerature. Wood was difficult to find and rare so the used stones to keep meet warm for 7 hours after fire was gone

As a monngolian this is pretty close to acurate( historically). Nowadays we mostly use steel caskets and put all the onions, carrots , potatoes etc then meat. Then specifically picked smooth rocks are heated on fire then put into the casket one by one rock in, close lid, shake and tumble repeat. The heat and steam cooks the meat. So it's fried and steamed at the same time.
So, what's the purpose of the rocks in the dish?
How do they affect meal?
@@matheusgclassen Rocks are used as additional heat source but more specifically for direct heat to get the grilled texture and flavors that you see once it's cooked. But also the levels created by stacking rocks increases the cooking surface area. As opposed to all the meat and onions sitting on top of each other and only the meat in contact with the pot will get the grilled texture and flavors.

I tried that too, it was good, but rocks were still tough even after 2,5 h of cooking..
@@kuboss007 Did the recipe too and these rocks can be surprisingly well preserved. I put the leftovers in the freezer and been gnawing at them for several weeks. Plus, they're low calories.
@@modest_spice6083 yeah and thanks to the natural character of the rocks, they do not spoil and decompose as easy as other kind of the foods, so if there is not enough space in your freezer, you can pull them out, put on the table for weeks, don’t care at all and they will look and taste fresh still the same way like if you would just took them out of the frying pan.

The rocks probably serve as a source of heat for the meat and veggies. As the fire is only on the bottom of the pot, if the rocks are heated they can serve as mini heaters to cook evenly.

I tried this out with surprisingly good results considering my lack of cooking experience. Amazingly tender meat, full of smokey flavour. I added a few bell peppers ino the mix. Excited to try this with other combinations.

I was very confused at how well seared the meat was in a steamed environment until I realized that the rocks were obtaining heat from the steam to sear the meat in contact with the rock surface. That's actually a 10,000 IQ cooking strat, I cannot believe I've never seen this method used before, I'm baffled at how cool this is.

Ughhhh our school system has failed us again. The rocks would never get hot enough in boiling water to sear the meat. Water under normal atmospheric pressure is only 212 degrees at sea level. The meat in that pot would never get seared unless it was at the bottom next to the direct heat and the water boiled away.

Having worked, studied and traveled in the Mediterranean region for most of my life (Turkey, Morocco, Marseille, Egypt, Greece, Tunisia) my favorite food in its simplicity is Grilled/Roasted Meat (beef, lamb, pork, or turkey) and hard Liquor, preferably outdoors (desert, forest, or sandy beach)
